Homemade Organic Absolutely Delicious Chicken and Wild Rice Casserole

I came up with this casserole and the first words I said when I ate it were “Absolutely delicious!”, so that’s how the casserole came to be named.  This is really great.  My family loves it and I  hope that yours will, too!

Here’s What You’ll Need:

  • 1 recipe Homemade Organic Mushroom Pilaf
  • 1/4 cup organic onions, diced
  • 4 cloves of of organic garlic, minced
  • 1/2 cup kidney bean drippings reserved from cooking kidney beans.  (I’m serious.  This is the secret ingredient!)
  • 1/2 cup filtered water
  • 1 cup of organic chicken drippings reserved from baking the organic chicken or Homemade Organic Chicken Stock.
  • 2 cups shredded Homemade Organic Chicken Roast
  • 1 Tbsp. schmaltz
  • 1/4 cup roux (equal parts of organic butter and non bleached flour mixed thoroughly)
  • 1/3 cup organic seasoned crackers, crushed
  • 1 Tbsp. Italian seasoning
  • 1 tsp. Real Salt

Here’s How I do it:

  1. Preheat the oven to 350 degrees.
  2. Heat a skillet over medium heat.
  3. Add the schmaltz and warm until bubbly.
  4. Add the onions and saute for 5 minutes.
  5. Add the garlic and saute for an additional 2 minutes.
  6. Add the bean drippings, chicken drippings and water.
  7. Turn it up to high heat and bring to a boil.
  8. Add the Italian seasonings and salt.  Mix well.
  9. Reduce the heat and allow to simmer for 5 minutes.
  10. Add the roux one tsp. at a time and whisk thoroughly to combine.
  11. Continue adding the roux until all of the roux is used and the sauce begins to thicken.
  12. Put the Organic Mushroom Pilaf in the bottom of a 9 X 13 X 2 ” pan.
  13. Place the shredded chicken pieces on top of the pilaf.
  14. Once the sauce is finished, add it on top of the shredded chicken.
  15. Place the shredded cheddar cheese on top of the shredded chicken.
  16. Sprinkle the crushed crackers on top.
  17. Bake for 35 minutes in a 350 degree oven.
  18. Enjoy!
