Homemade Organic Coconut-Pecan Filling

Here’s How I do it:

  1. In a medium saucepan, mix evaporated milk (or half-and-half or heavy cream), sugar, egg yolks and vanilla over medium heat.
  2. Cook the mixture for 12 minutes.
  3. Add flaked coconut and chopped pecans.
  4. Beat until thickened.
  5. Enjoy!
