Here’s What You’ll Need:

Here’s How I do it:

  • Preheat your oven to 350° Fahrenheit.
  • Grease your pie plate with 1 tsp. tallow or lard, making sure to get all of the sides as well as the bottom thoroughly coated.
  • Add 1 Tbsp. tallow or lard to a medium sized skillet over medium-high heat.
  • Add the bell pepper, jalapenos or poblanos (if using), and onion to the skillet and saute for about 4 minutes.
  • Add the garlic and saute for an additional minute.
  • Add the tomato and Stir well.
  • Allow the mixture to saute for about 10 minutes, or until the tomatoes get soft.
  • Spread sour cream sauce all over the bottom of the pie plate.
  • Add three flour tortillas.
  • Spread the sour cream sauce on top of the tortillas.
  • Sprinkle the ground beef and beans on top of the sauce.
  • Add the vegetable mixture on top so that the tortillas are well coated.
  • Top with salsa verde
  • Sprinkle with 1/3 of the shredded cheese.
  • Add three more flour tortillas.
  • Spread more sour cream sauce on top of the tortillas.
  • Sprinkle the ground beef and beans on top of the sauce.
  • Add more of the vegetable mixture on top while making sure to coat the tortillas.
  • Top with salsa verde.
  • Sprinkle with 1/3 of the shredded cheese.
  • Add the final three flour tortillas.
  • Spread more sour cream sauce on top of the tortillas.
  • Sprinkle the ground beef and beans on top of the sauce.
  • Add the remaining vegetable mixture on top of the tortillas.
  • Top with the last of the salsa verde.
  • Sprinkle with the remaining cheese.
  • Bake for 30 minutes at 350 ° Fahrenheit, or until the cheese is melted and slightly browned and the sauce is bubbly.
  • Enjoy!
