Homemade Organic Chicken Gravy

Here’s How I do it:

  • 1 Tbsp. organic pasture chicken drippings (liquid and schmaltz)
  • 1 Tbsp. organic unbleached white flour
  • 1 cup Homemade Organic Chicken Stock (or a mixture of 2/3 cup Homemade Organic Chicken Stock and 1/3 cup Homemade Organic Vegetable Stock)
  • 1/2 tsp. Real Salt (more to taste if necessary)
  • 1/4 tsp. organic freshly ground peppercorn blend

Here’s  How I do it:

  1. Heat a frying pan over medium heat.
  2. If you have just baked a chicken, pour the drippings into a frying pan and allow the bits of chicken to go in the pan, too.  Make sure there’s at least 1 tablespoon chicken drippings in the pan.
  3. Mix the flour into the pan drippings.
  4. Cook over low heat until the mixture is thick and bubbly, approximately 2-3 minutes.
  5. Add the stock(s) to the flour mixture.
  6. Bring the mixture to a boil while stirring constantly.
  7. Boil and stir for an additional minute.
  8. Enjoy!
