Deconstructed Stuffed Jalapeno Popper Grilled Cheese Sandwich

Here’s What You’ll Need:

  • 2 oz. organic cream cheese, sliced
  • 1/4 cup shredded organic cheddar cheese
  • 1/4 cup Homemade Organic Pickled Jalapeno slices
  • 1/2 tsp. organic Italian seasoning
  • 1/4 tsp. Real Salt
  • 2  slices organic sourdough bread

Here’s How I do it:

  1. Warm a medium sized skillet over medium-high heat.
  2. Add 1 Tbsp. butter and place a slice of bread on top.
  3. On top of the bread, sprinkle some cheese and place the jalapeno slices on top.
  4. Cook the bread until it’s lightly browned; Remove from pan and place on a plate.
  5. Add 1 more Tbsp. of butter to the pan and place another slice of bread on top.
  6. Add the cream cheese, salt and Italian seasoning to the bread and sprinkle with more shredded cheese.
  7. Place the removed piece of bread with the jalapeno slices on it on top of the the other slice of bread in the pan.
  8. Cook until lightly golden brown on the bottom.
  9. Enjoy!

Homemade Organic Meatloaf Patty Melt

Here’s What You’ll Need:

  • 2 thin slices Homemade Organic Beef and Pork Meatloaf
  • 1/2 small organic yellow onion, sliced
  • 3 large organic button or cremini mushrooms
  • 4 pieces of organic rye or multigrain bread
  • 1/2 cup shredded organic cheddar cheese
  • 4 Tbsp. organic pasture butter
  • 2 Tbsp. home rendered lard or tallow, divided in half

Here’s How I do it:

  1. Heat a medium saucepan over medium-high heat.
  2. Add 2 Tbsp. of lard or tallow to the pan and allow to get warm and bubbly.
  3. Saute the onion slices until translucent, approximately five minutes; Remove from pan and set aside.
  4. Fry the meatloaf slices until lightly browned on both sides; Set aside.
  5. In the same pan, add 1 Tbsp. butter and place a slice of bread on top.
  6. On top of the bread, sprinkle some cheese and place the cooked meatloaf slice on top.
  7. Cook the bread until it’s lightly browned; Remove from pan and place on a plate.
  8. Add 1 more Tbsp. of butter to the pan and place another slice of bread on top.

This is much like a meatball submarine sandwich, but with meatloaf instead of meatballs.

  1. In a small sauce pot, warm the pizza sauce and keep at a low simmer until needed.
  2. Heat a medium-sized skillet over medium-high heat.
  3. Add lard or tallow and allow to get warm and bubbly.
  4. Place meatloaf slices into the skillet and fry until lightly golden brown on each side.
  5. Put a fried meatloaf slice on top of the hoagie roll.
  6. Top with warmed pizza sauce, mozzarella and parmesan cheese.
  7. Repeat steps 5-6 for each sandwich.
  8. Enjoy!

 

Homemade Organic Hamburgers

Here’s How I do it:

  1. Warm a medium-sized skillet over medium-high heat.
  2. Add the burger patties to the pan.
  3. Cook until the patties are well done and set aside.
  4. Assemble the burgers by spreading on the ketchup, mayonnaise and/or mustard on the inside of the top and/or bottom bun.
  5. Then place a cooked hamburger patty on the bottom bun.
  6. Add the cheese, lettuce, onion, tomato and/or pickles to the burger.
  7. Place the top bun on top of the burger.
  8. Repeat steps 3-7 until all burgers are made.
  9. Enjoy!

 

 

Homemade Organic Meatloaf Sloppy Joes

Here’s What You’ll Need:

Here’s How I do it:

  1. Heat a skillet over medium high heat.
  2. Add the tallow or lard to the skillet and allow to get warm and bubbly.
  3. Add the onions and saute for 5 minutes.
  4. Add the bell pepper (and minced garlic, if using); Saute for 3 minutes.
  5. Add the ketchup and stir well.
  6. Add the stock and seasonings, stir well.
  7. Once everything is heated, add to hamburger buns and serve.
  8. Enjoy!

Homemade Organic Basic Burger Patties

Here’s What You’ll Need:

  • 1 lb. organic grass-fed ground beef
  • 1 tsp. Real Salt
  • 1/2 tsp. organic freshly-ground peppercorn blend
  • 1 tsp. organic granulated garlic
  • 1 tsp, organic onion powder
  • 1 tsp. ground organic cayenne pepper (optional)

Here’s How I do it:

  1. Mix all ingredients in a medium-sized mixing bowl.
  2. Make 4 patties for hamburgers or 2 patties for patty melts.
  3. Cook them in a skillet until desired doneness is reached.
  4. Enjoy!

Homemade Organic Ground Beef Quesadillas

Here’s What You’ll Need:

Here’s How I do it:

  1. Heat a skillet over medium-high heat.
  2. Spread the refried beans onto the tortilla.
  3. Sprinkle the ground beef on top of half of the tortilla.
  4. Add the onion, poblanos, and garlic on top of the ground beef.
  5. Fill in the rest with shredded cheese.
  6. Fold the quesadilla in half.
  7. Cook for 45 seconds on each side.
  8. Top with salsa, sour cream and pickled jalapeno slices.
  9. Enjoy!

Homemade Organic Almost Moons Over my Hammy Sandwich

I have adapted this recipe from Top Secret Recipes.

Here’s What You’ll Need:

  • 2 Tbsp. organic pasture butter, divided in half
  • 2 organic pasture eggs, scrambled
  • 1/4 tsp. Real Salt
  • 1/4 tsp. organic freshly-ground peppercorn blend
  • 2 slices organic sourdough bread
  • 1 organic pasture ham steak
  • 4 slices organic swiss cheese (cut from a block of cheese)
  • 4 slices organic colby, cheddar or jack cheese (cut from a block of cheese)
  • organic lard or other fat for frying

Here’s How I do it:

  1. Put an omelette pan (or small frying pan) over medium high heat.
  2. Add lard to the pan and allow to get warm and bubbly.
  3. Fry the ham steak.  Make sure to get a good sear on each side of the ham, but don’t overcook it; Set aside.
  4. Lower the heat to medium.
  5. Mix the salt and pepper with the eggs and scramble them.
  6. Add more lard to the pan and allow to get warm and bubbly.
  7. Add the eggs to the pan and cook until 3/4 done.
  8. Flip the egg into an omelette; Set aside.  (This is for easier eating, but scrambled eggs work, too.)
  9. Place cheese on both pieces of bread (save a slice or two for the middle of the sandwich).
  10. Place the omelette on one piece of bread and the ham on the other.
  11. Place the remaining cheese on the piece of bread with the ham on it.
  12. Add some butter to the frying pan, being sure to leave it in the middle of the pan.
  13. Quickly add the piece of bread with the omelette on it on top of the butter.
  14. Once the bread is toasted, take it off of the heat.
  15. Place it on top of the bread with the ham slice on it.
  16. Add another pad of butter to the center of the pan.
  17. Place the sandwich on top of the butter.
  18. Cook until the other piece of bread is toasted.
  19. Slice diagonally and serve.
  20. Enjoy!
