Homemade Organic Hamburger Helper Bacon Cheeseburger

Here’s How I do it:

  1. In a deep frying pan with lid, cook the bacon until crispy; Reserve the bacon grease in the pan, remove the bacon from the pan, cut it into small pieces, and set aside.
  2. If using Homemade Organic Freezer Beef Mix or Homemade Organic Freezer Ground Pork Mix:  Pour 1/2 cup water into a deep frying pan with lid; Add the frozen meat mix and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover, then add the mushrooms (if using), tomatoes, and garlic; Break up the frozen chunks into smaller pieces. Cover and simmer for an additional 5 minutes.  Proceed with step 5.
  3. Brown the meat in the frying pan used for the bacon until halfway done.
  4. Add the tomatoes, onions, mushrooms (if using) and garlic, then saute with the ground meat for 6 to 7 minutes until the onions are clear.
  5. Pour in the beef stock, vegetable stock, whey and milk.
  6. Add the macaroni or cavatelli, stir well.
  7. Stir in the salt, pepper, turmeric, and cayenne (if using).
  8. Slowly bring the mixture to a boil then simmer, covered, until the noodles are al-dente, approximately 16-22 minutes; Stir occasionally.
  9. Stir in the cheddar, ricotta and blue cheeses, allowing them to melt into the dish.
  10. Enjoy!

Homemade Organic Better-Than-Velveeta Classic American Casseroles Loaded Mashed Potato

Here’s What You’ll Need:

Ground Beef Mixture:

Mashed Potatoes:

  • 8 to 10 small organic potatoes
  • 1/2 cup grass-fed organic whole milk (optional; use 1/2 cup unchlorinated and unfluoridated water instead)
  • 1 tsp. Real Salt
  • 3 Tbsp. organic pasture butter
  • 1/4 tsp. freshly ground organic peppercorn blend

Cheese Sauce:

  • 2 Tbsp. organic pasture butter
  • 2 Tbsp. organic unbleached white flour
  • 1 cup grass-fed organic whole milk
  • 1 cup organic cheddar cheese
  • 1/2 tsp. Real Salt
  • 1/2 tsp. organic paprika
  • 1/2 tsp. organic ground turmeric

Topping:

Here’s How I do it:

  1. Preheat the oven to 350° Fahrenheit.
  2. Grease a 2 quart casserole dish with additional pasture butter.
  3. In a deep frying pan, cook the bacon until crisp, then chop into small bits and set aside; Reserve 1 tablespoon grease in pan (reserve the rest for future use) and add 2 tablespoons of flour to the grease and stir until well combined.
  4. Make Mashed Potatoes:  In a large stockpot, bring a half-gallon of water to a boil.  Meanwhile, scrub and cube potatoes (peel if desired).  Add the cubed potatoes to the boiling water and cook for 20 minutes, or until fork tender.  Remove from boiling water, add milk, butter, salt and pepper until well blended.
  5. Make Ground Beef Mixture:   
    1. If using Homemade Organic Freezer Meat Mix:  Pour 1/2 cup unchlorinated and unfluoridated water into the pan used to fry the bacon; Add the frozen mix, and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces.  Cover and simmer for an additional 5 minutes. (proceed to step c)
    2. If using grass-fed organic ground beef: Put the beef in the same frying pan used to crisp the bacon, add the onions.  Cook over medium heat until the meat is browned and the onions are translucent.  (proceed to step c)
    3. Add the beef stock, vegetable stock, salt, pepper and sour cream to the meat mixture; Cook until thickened and bubbly, set aside.
  6. Make Cheese Sauce:  Melt 2 tablespoons butter in a small saucepan over medium heat, then add the flour, stirring until thick and smooth.  Pour in the milk, salt, pepper, paprika and turmeric, whisking until well combined.  Cook the mixture until it thickens, then add the cheese and stir until blended.  Keep on the back burner on low heat until needed.
  7. To Assemble Casserole: Pour the meat mixture into the prepared baking dish.  Top with the prepared mashed potatoes, spreading to coat evenly.  Top with the warmed cheese sauce.  Sprinkle the top with bacon pieces and chives.
  8. Bake at 350° Fahrenheit for 20- 25 minutes or until heated through; The casserole should be bubbly at the sides.

Homemade Organic Bacon Double Cheeseburger Dip

I have adapted this from Closet Cooking.  I found that keeping this dip warm in a small Crockpot, or something similar, is better than allowing this dip to cool.

Here’s What You’ll Need:

Here’s How I do it:

  1. Preheat the oven to 350° Fahrenheit
  2. If you’re using pork belly, please season with salt and pepper to taste.
  3. Cook the bacon in the pan until crispy, about 6-10 minutes; Set aside and drain all but a tablespoon of the grease, reserve the remaining grease for another use.
  4. Cook the ground beef in the bacon pan over medium heat; Set aside.
  5. Add the seasoning salt and onion; Saute until tender, about 5 minutes.
  6. Add the garlic and saute until fragrant, about 1 minute.
  7. Mix the ground beef, bacon, onions, garlic, cream cheese, sour cream, mayonnaise, mozzarella, cheddar, worcestershire sauce, and ketchup into a 1 qt. baking dish.
  8. Bake in a preheated 350° Fahrenheit oven until the top starts turning a light golden brown and then sides are bubbling, about 20-30 minutes.
  9. Transfer to a 1 qt. Crockpot on the warm setting.
  10. Keep this dip warm, but not hot, for best results.
  11. Serve with thick potato chips, toasted baguette slices, or butter crackers.
  12. Enjoy!

 

Homemade Organic Pig in the Garden Sandwiches

This is the deluxe version of a BLT (Bacon Lettuce and Tomato Sandwich)

Here’s What You’ll Need:

  • 1 lb. organic pork belly, thinly sliced OR 1 lb. organic bacon without synthetic additives
  • 4 pieces organic green leaf or organic romaine lettuce
  • 8 slices organic sharp cheddar cheese
  • 2 thin slices organic yellow onion, separated
  • 4 sliced organic cremini mushrooms
  • 1 organic tomato, sliced
  • 4 Tbsp Homemade Organic Mayonnaise
  • 8 slices organic sandwich bread (Your choice, I usually use an organic multigrain bread or organic rye bread.)

Here’s How I do it:

  1. Cook the bacon or pork belly to your desired crispness, seasoning if appropriate.
  2. Spread mayonnaise onto the bread slices.
  3. Add some fried bacon, onion, mushroom, tomato, cheese and lettuce to the sandwich.
  4. Top with a second slice of bread with mayonnaise.
  5. Enjoy!

Homemade Organic Bacon and Hash Brown Casserole

Here’s What You’ll Need:

  • 1 lb. organic pork belly, sliced thin like bacon OR organic bacon without synthetic additives
  • 1 small organic yellow onion, chopped
  • 4 cups frozen Homemade Organic Hash Brown Potatoes
  • 2 1/4 cups organic grass-fed whole milk
  • 8 large organic pasture eggs
  • 1 tsp. Real Salt
  • 1/4 tsp. organic freshly ground peppercorn blend
  • 1/4 tsp. freshly grated organic nutmeg
  • 1 Tbsp. organic dry mustard
  • 4 cups cubed organic multigrain bread; crusts removed, diced and dried for croutons
  • 1 cup grated organic cheddar
  • 1 cup freshly grated organic Parmesan

Here’s How I do it:

  1. Preheat the oven to 350 degrees F.
  2. Cook the bacon over medium-high heat until it is cooked through.
  3. Using additional lard, butter or bacon grease, coat a 9″ x 13″ casserole dish.
  4. Add the onion and saute over medium-low heat until soft, about 5 minutes.
  5. Add the hash browns and break apart. Saute until crispy, about 10 -15 minutes.
  6. In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard.
  7. Whisk briskly to blend.
  8. Spread the onions and hash browns evenly at the bottom of the greased dish.
  9. Place the bread cubes evenly on top of hash browns. With a slotted spoon distribute sausage as the third layer. Pour the milk and egg mixture over these layers.
  10. Add Parmesan as the next layer, and then add the cheddar as the final layer.
  11. Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.
  12. Enjoy!

If you’d like, you can refrigerate the casserole overnight before baking.

 

Homemade Organic Zesty Baked Beans in a Slow Cooker

Here’s What You’ll Need:

  • 4 cups organic dried navy beans
  • 1-2 lbs. organic sliced pork belly, or organic uncured bacon
  • 1 large organic yellow onion, diced
  • 6-8 organic cloves of garlic, whole
  • 4 cups [1 quart] Homemade Organic Chicken Stock
  • 1 1/2 cups Homemade Organic Almost Heinz 57 Sauce
  • 1 1/2 Tbsp. organic prepared yellow mustard, like Eden Organic
  • 1/2 cup organic light brown sugar
  • 2 Tbsp. organic tomato paste
  • 1 Tbsp. Real Salt
  • 1 Tbsp. organic smoked paprika
  • 1 tsp. organic chipotle
  • 1 tsp. organic cumin
  • 1/2 tsp. organic red pepper flakes
  • 1/2 tsp. organic freshly ground peppercorn blend

Here’s How I do it:

  1. Rinse the beans thoroughly.
  2. Place the navy beans, diced onion, whole garlic cloves, chicken stock, Almost Heinz 57 Sauce, prepared mustard, tomato paste and light brown sugar into a 4- 5 quart slow cooker and mix well.
  3. On the low setting, cook the beans for 4 hours.
  4. Add the salt, smoked paprika, chipotle, cumin, red pepper flakes, and ground peppercorn blend to the stock pot and stir well.
  5. Cook the beans for an additional 6 hours on low, or until the beans are tender
  6. Enjoy!

Homemade Organic Hamburger Helper Cheesy Baked Potato

Here’s What You’ll Need:

  • 1 lb. grass-fed ground beef or 1 pint Homemade Organic Freezer Beef Mix
  • 1 Tbsp. rendered bacon fat, can substitute rendered ham fat
  • 2 Tbsp. organic unbleached white flour
  • 1/2 cup homemade organic cracklings; OR cooked organic bacon, diced; OR cooked organic pork belly, seasoned to taste with salt and pepper and diced
  • 1 cup Homemade Organic Beef Stock
  • 3/4 cup Homemade Organic Vegetable Stock
  • 1 cup grass-fed organic whole milk
  • 1/4 cup Homemade Organic Sweet Whey
  • 1/8 tsp. homemade smoke flavoring (not from a store!!)
  • 3-4 small organic new potatoes, sliced 1/8″ thick (Make sure the potatoes are right about the same size and use a mandolin or food processor with slicing blade to slice them.)
  • 2-3 organic garlic cloves, minced (optional)
  • 2 tsp. dried organic parsley flakes
  • 2 tsp. dried organic chives
  • 2 tsp. Real Salt
  • 1/2 tsp. organic ground peppercorn blend
  • 1/4 tsp. organic turmeric
  • 1-1/4 cups organic cheddar cheese
  • 1/4 cup organic ricotta cheese
  • 1/2 cup organic sour cream
  • 1 Tbsp. organic blue cheese crumbles

Here’s How I did it:

  1. If using Homemade Organic Freezer Beef Mix:  Pour 1/4 cup water into a deep frying pan with lid; Add the frozen beef mix and simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces and add the garlic; Cover and simmer for an additional 5 minutes.  Add the bacon grease to the skillet and mix with the flour; Heat for one minute. Proceed with step 5.
  2. Heat a saucepan over medium-high heat.
  3. Add the rendered bacon or ham fat to the pan and and mix with the flour; Heat for one minute.
  4. Add the ground hamburger and saute until halfway browned; Add the garlic and cook until the hamburger is browned.
  5. Add the sour cream, milk, whey, beef stock, liquid smoke, chives, parsley, turmeric, garlic, salt, and pepper to the pan and mix well.
  6. Heat the mixture until just shy of boiling over medium-high heat, as to not scald the milk.
  7. Add the sliced potatoes, reduce heat to medium-low and cover.
  8. Simmer, covered, for 20 to 25 minutes, or until the potatoes are tender, gently stirring occasionally.
  9. Gently stir in the cheddar cheese, ricotta cheese, and blue cheese, allowing it to melt into the dish.
  10. Uncover and allow to stand for 5 minutes so that the mixture can thicken.
  11. Enjoy!
