Homemade Organic Dairyland Confetti Chicken Casserole

Here’s How I do it:

  1. Preheat oven to 350° Fahrenheit.
  2. If using Homemade Organic Freezer Ground Chicken Mix: Pour 1/2 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen chicken mix, carrots, celery and onion. Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces.  Cover and simmer for an additional 5 minutes.  While the chicken mix is thawing, proceed with step 4.
  3. In a saucepan, combine carrots, onion, celery and chicken stock; Simmer for 20 minutes.
  4. Meanwhile, in a 3-quart casserole dish, mix shredded chicken/thawed chicken mix, soup, sour cream, mushrooms, Worcestershire sauce, salt and pepper; Add simmered vegetables along with the liquid into the casserole dish; Mix well.
  5. Prepare the Homemade Organic Confetti Topping.
  6. Drop the topping by the tablespoonful onto the chicken mixture.
  7. Bake in an oven preheated to 350° Fahrenheit for 40 to 45 minutes.
  8. Sprinkle with cheese and return to oven until melted, approximately 2-3 minutes.
  9. Enjoy!

Homemade Organic Day-After-Thanksgiving Strata

This is a great way to use leftovers from Thanksgiving dinner and turn them into a different dish.

Here’s How I do it:

  1. Preheat the oven to 375° Fahrenheit.
  2. Combine the soup and stock in a saucepan over medium heat.
  3. Once the soup is warmed, add the turkey and warm through (approximately 5 minutes).
  4. Add a layer of stuffing to the bottom of 2 quart casserole dish.
  5. Top the stuffing with a layer of the turkey mixture.
  6. Repeat steps 3-4 until the casserole is filled.  Make sure that the top layer is the turkey mixture.
  7. Sprinkle the top of the dish with grated Parmesan cheese.
  8. Bake for 20 minutes at 375° Fahrenheit.
  9. Enjoy!

Homemade Organic Shredded Chicken and Vegetable Skillet

Here’s How I do it:

  1. Put the schmaltz into a frying pan (preferably one with deeper walls) on medium heat.
  2. Once the oil is hot, add the carrots to the pan and saute for 5 minutes.
  3. Add the onions to the pan and saute for 4 minutes.
  4. Add the garlic to the pan and saute for 1-2 minutes.
  5. Add the chicken stock to the pan and bring to a boil.
  6. Add the broccoli and shredded chicken to the pan.
  7. Add Italian seasoning, Real Salt and pepper.
  8. Add the cream of chicken soup and mix well in the pan.
  9. Add the dried bread pieces.
  10. Cook until the sauce thickens slightly and all of the flavors are well blended, about 8 to 10 minutes.
  11. Sprinkle the cheese on top, and take off the heat.
  12. Once the cheese is melted, stir well and enjoy!
