Homemade Organic Hot Dog Chili Sauce

I have slightly adapted the recipe from Hilah Cooking.

Here’s What You’ll Need:

  • 3 Tbsp.organic pasture butter; OR grass-fed beef tallow
  • 1 medium organic yellow onion, finely chopped
  • 2-3 organic garlic cloves, finely chopped
  • 1-2 whole Homemade Organic Pickled Jalapenos, finely chopped  [1/3 cup]
  • 1 lb. grass-fed ground beef
  • 12 oz. organic porter beer; OR 1-1/2 cups Homemade Organic Beef Stock
  • 2 tsp. Real Salt
  • 2 tsp. organic red chili pepper powder
  • 1 tsp. organic ground cumin
  • 1/2 tsp. freshly ground organic peppercorn blend
  • 1/2 tsp. dry organic yellow mustard
  • 2 Tbsp. organic Worcestershire sauce (Annie’s is great)
  • 2 Tbsp. organic jarred tomato paste
  • 1 Tbsp. organic apple cider vinegar; OR Homemade Organic Pickled Jalapeno brine (optional)

Here’s How I do it:

  1. Heat butter in a large stockpot over medium-high heat until warm and bubbly.
  2. Add onion and saute for about 1 minute; Stir in the jalapeno and garlic and saute for 30 seconds more.
  3. Lay the unwrapped chunk of ground beef on top of the onion mixture.
  4. Pour in the beer or stock, then add salt, red chili pepper powder, cumin, pepper, dry yellow mustard, Worcestershire sauce, and tomato paste.
  5. Break up the ground beef into chunks.
  6. Bring to a boil, reduce heat, and simmer for 1 hour.
  7. Season to taste with salt and pepper, if necessary, and add vinegar if the sauce needs a little zip.
  8. This makes approximately 1 quart of sauce.

Homemade Organic Red Enchilada Sauce with Long Hot Peppers

Here’s what you need:

  • 4 cups Homemade Organic Chicken Stock or Homemade Organic Beef Stock(preferred)
  • 2 cups organic crushed tomatoes, or diced organic tomatoes with juice
  • 2 cups organic yellow onion, chopped
  • 4 large organic garlic cloves, minced
  • 1 organic long hot pepper
  • 4 tsp. organic ground cumin
  • 2 tsp. organic dried oregano
  • 1 tsp. Real Salt, or to taste
  • organic freshly ground peppercorn blend, to taste

Here’s how I do it:

  1. Put water in a kettle and boil it.
  2. Heat up a medium frying pan to really high heat.
  3. Add the cut long hot pepper (seeds and all if you like it hotter!) to the pan.
  4. Press down on the pepper pieces and cook for 3 minutes on each side.
  5. Transfer the charred chilies to a bowl and reserve the soaking liquid.
  6. Add boiling hot water to the bowl and cover with another bowl or plate to prevent them from floating.
  7. Set a timer and allow the chilies to soak for 30 minutes; While the chilies are soaking, proceed to the next step in the recipe.
  8. Place some schmaltz (if using chicken stock) or tallow (if using beef stock) into a frying pan.
  9. Once the oil is warm enough, add the onions and cook for 5 minutes.
  10. Add the garlic and cook for an additional 5 minutes until the onions brown slightly.
  11. You may still have to wait for the chilies to finish soaking.
  12. Next, I transfer the chilies, garlic and onions to a half-gallon mason jar.
  13. Add the tomato puree and stock to the jar.
  14. I get out my immersion blender and I blend everything into a thick liquid.
  15. You can strain the liquid into the frying pan, or just dump it all in if you want a hotter sauce.
  16. Add the cumin and oregano to the sauce, mix well and bring to a boil.
  17. Reduce the heat and allow the sauce to simmer for 30 minutes.
  18. If the sauce isn’t warm enough for you, you can add the soaking liquid to the sauce.
  19. I generally can the extra sauce as freezing it will make it hotter.
  20. Enjoy!

Homemade Organic Zesty Baked Beans in a Slow Cooker

Here’s What You’ll Need:

  • 4 cups organic dried navy beans
  • 1-2 lbs. organic sliced pork belly, or organic uncured bacon
  • 1 large organic yellow onion, diced
  • 6-8 organic cloves of garlic, whole
  • 4 cups [1 quart] Homemade Organic Chicken Stock
  • 1 1/2 cups Homemade Organic Almost Heinz 57 Sauce
  • 1 1/2 Tbsp. organic prepared yellow mustard, like Eden Organic
  • 1/2 cup organic light brown sugar
  • 2 Tbsp. organic tomato paste
  • 1 Tbsp. Real Salt
  • 1 Tbsp. organic smoked paprika
  • 1 tsp. organic chipotle
  • 1 tsp. organic cumin
  • 1/2 tsp. organic red pepper flakes
  • 1/2 tsp. organic freshly ground peppercorn blend

Here’s How I do it:

  1. Rinse the beans thoroughly.
  2. Place the navy beans, diced onion, whole garlic cloves, chicken stock, Almost Heinz 57 Sauce, prepared mustard, tomato paste and light brown sugar into a 4- 5 quart slow cooker and mix well.
  3. On the low setting, cook the beans for 4 hours.
  4. Add the salt, smoked paprika, chipotle, cumin, red pepper flakes, and ground peppercorn blend to the stock pot and stir well.
  5. Cook the beans for an additional 6 hours on low, or until the beans are tender
  6. Enjoy!

Homemade Organic Pico de Gallo

To vary the heat, add more pickled jalapenos or add less.  You can omit them entirely if you’d like.

Here’s What You’ll Need:

  • 1 medium to large organic tomato, diced
  • 1 large organic yellow onion, diced
  • 1 organic green bell pepper, diced
  • 3-4 organic garlic cloves, minced
  • 3-4 rings of Homemade Organic Pickled Jalapenos, minced
  • 1 tsp. organic cumin
  • 1 tsp. organic dried cilantro
  • 1 tsp. Real Salt

Here’s How I do it:

  1. Place all ingredients into a medium sized mixing bowl.
  2. Stir until well combined.
  3. Place into a glass jar with a tight-fitting lid for storage.

Homemade Organic Salsa Verde

If you’d like a milder salsa verde, omit the peppers and use the juice from Homemade Organic Pickled Jalapenos, to your taste.

Here’s What You’ll Need:

  • 1 lb. organic tomatillos, outer skins peeled and removed and cut in half
  • 1 medium organic yellow onion, cut into fourths
  • 4 organic garlic cloves
  • 1-2 organic jalapeno peppers, stems removed.  (If you want it hotter use organic serrano peppers or a combination of the two)
  • 2 cups Homemade Organic Chicken Stock or Homemade Organic Beef Stock
  • 2 tsp. Real Salt
  • 2 tsp. organic cumin
  • 2 tsp. organic dried cilantro

Here’s How I do it:

  1. Heat a medium sized skillet over medium-high heat.
  2. Add the tomatillo slices, onion slices and garlic cloves to the skillet, charring on all sides.
  3. Place the charred vegetables into a half-gallon glass jar.
  4. Using an immersion blender, puree the vegetables.
  5. Place the puree, chicken stock, salt, cumin and cilantro into the skillet and stir until well combined.
  6. Bring the mixture to a boil.
  7. Reduce heat and allow to simmer for 20- 30 minutes, or until the desired consistency is reached.
  8. Enjoy!

Homemade Organic Green Jalapeno Salsa

Warning, this salsa is pretty hot.  You can adjust the heat to your specific tastes by using the tips throughout this recipe.  Please note that jalapenos freeze well, but they become HOTTER after frozen.

Here’s What You’ll Need:

Here’s How I do it:

  1. Warm the lard (or fat of choice) in a skillet over medium-high heat.
  2. Add the onions to the frying pan and saute for 4 minutes.
  3. (If you want your salsa to be mild, remove the membranes and seeds from the jalapenos and place them into the skillet at the same time as the onions.)
  4. Add the garlic to the skillet and saute for an additional 2 minutes, or until the onions are translucent.
  5. (If you want your salsa to be medium, add the jalapenos to the skillet now)
  6. Place the onion mixture, and jalapenos if you didn’t cook them, into a glass jar (a wide-mouth pint-and-a-half jar works well).
  7. Using an immersion blender, puree the vegetable mixture.
  8. Add the salt, lime juice, dried cilantro and cumin to the puree and pulse with the immersion blender on low.
  9. Enjoy!

Homemade Organic Magic Poultry Seasoning

I got the recipe from Top Secret Recipes and quadrupled the recipe because it’s marvelous!

Here’s What You’ll Need:

  • 2 Tbsp. Real Salt
  • 2 tsp. organic paprika
  • 1 tsp. organic cayenne powder
  • 1 tsp. organic granulated onion
  • 1 tsp. organic granulated garlic
  • 1 tsp. organic peppercorn blend, freshly ground
  • 1 tsp. organic dried thyme
  • 1 tsp. organic dried oregano
  • 1/4 tsp. organic powdered sage
  • 1/2 tsp. organic ground cumin

Here’s How I did it:

  1. Add all ingredients to a jar with tight fitting lid.
  2. Shake to mix well.
  3. Store in the jar or an old spice jar.
  4. Enjoy!
