Homemade Organic Flour Tortilla Mix

Here’s What You’ll Need:

  • 10 cups organic unbleached white flour
  • 5 tsp. Real Salt
  • 5 tsp. Homemade Baking Powder
  • 1/3 cup home rendered lard

Here’s How I do it:

  1. In a very large mixing bowl, combine flour, salt and baking powder.
  2. Cut in the lard until mixture resembles cornmeal.
  3. Store in a covered air-tight container at room temperature for up to six weeks.  Freeze this mix If you intend to keep the mix longer than six weeks.

To make tortillas:

  • 2-1/2 cups tortilla mix
  • 1/2 to 3/4 cup warm water (110° Fahrenheit)

Here’s  How I do it:

  1. Add 1/2 cup warm water and mix until dough can be gathered into a ball.  (If needed, add more water, 1 Tbsp. at a time.)
  2. Let dough rest 15 minutes, covered with a clean kitchen towel.
  3. Divide dough into 12 portions.
  4. Shape each portion into a ball.
  5. On a lightly floured surface, flatten each ball with a small luncheon plate.
  6. Roll each flattened ball into a 7-inch round.
  7. Trim uneven edges to make round tortillas, if necessary.
  8. Cook in an ungreased skillet over medium-high heat until each tortilla is lightly browned on both sides.
  9. Yields 12 tortillas.
  10. Enjoy!

Homemade Organic Whole Wheat Tortilla Mix

Homemade Organic Basic Cornbread Mix

Here’s What You’ll Need:

  • 5 cups organic yellow cornmeal
  • 6-1/2 cups organic unbleached flour
  • 1-1/4 cups organic cane sugar
  • 1/3 cup Homemade Baking Powder
  • 1 Tbsp. Real Salt
  • 1-1/4 cups [ 2-1/2 sticks] organic pasture butter

Here’s How I do it:

  1. In a very large mixing bowl, combine cornmeal, flour, sugar, baking powder and salt.
  2. Cut in butter until the mixture resembles coarse crumbs.
  3. Store in a covered air-tight container at room temperature for up to six weeks.  Freeze this mix If you intend to keep the mix longer than six weeks.

To make cornbread:

  • 2-1/2 cups Homemade Organic Cornbread Mix
  • 2 organic pasture eggs
  • 1 cup organic grass-fed whole milk
  1. Preheat the oven to 425° Fahrenheit.
  2. Stir the mix lightly and thoroughly before measuring.
  3. Measure 2-1/2 cups of mix:  Spoon the mix lightly into the measuring cup and level off evenly with the flat edge of a butter knife.
  4. Beat together eggs and milk; Add to premade mix.
  5. Beat everything together until smooth.
  6. Pour into a greased 9x9x2″ loaf pan.
  7. Bake for 20-25 minutes at 425° Fahrenheit.
  8. Enjoy!

Homemade Organic Basic Pastry Mix

Here’s What You’ll Need:

  • 6 cups organic unbleached white flour
  • 1-1/2 cups organic pasture butter, home rendered lard, or a combination of the two
  • 1 Tbsp. Real Salt

Here’s How I do it:

  1. Pour the flour and salt into a large mixing bowl; Whisk until well combined.
  2. Cut the flour mixture with the fat until it resembles small peas.
  3. This mixture may be stored at room temperature; However, storing it in the refrigerator cuts time in making the pastry dough.  If one plans on keeping this mixture longer than 1 month, keep the mixture in the freezer.

To  make one pastry crust:

  1. Mix 1-1/2 cups of Homemade Organic Basic Pastry Mix with 3-4 tablespoons of cold unchlorinated and unfluoridated water, adding one tablespoon of water at a time.

To make two pastry crusts (or enough for one crust and a lattice top):

  1. Mix 3 cups of Homemade Organic Basic Pastry Mix with 5-7 tablespoons of cold unchlorinated and unfluoridated water, adding one tablespoon of water at a time.
