Homemade Organic Shortcut Coronado Chicken

Here’s What You’ll Need:

Here’s How I do it:

  1. In a small saucepan combine rice, 2 cups chicken stock, and 2 Tbsp. butter; Cover and bring to a boil.
  2. Meanwhile, in a large skillet combine frozen chicken mix onion and 1/4 cup chicken stock; Cover and cook for 15 minutes over medium heat.
  3. Once boiling, reduce heat on the rice and cook for 40 minutes, or until rice is tender; Take off of heat, fluff with a fork and set aside.
  4. Break up the chunks of chicken, add garlic to pan; Cover and cook for an additional 5 minutes.
  5. Stir in tomato sauce, 1 cup of beer or chicken stock, paprika, chili powder, salt and Worcestershire sauce.
  6. Bring the mixture to a boil; Reduce heat and simmer for about 10 minutes.
  7. Combine flour and sour cream; Stir half of the pan juices into the sour cream; Return sour cream mixture to the pan.
  8. Cook and stir until the mixture is thickened and bubbly; Cook for an additional 2 minutes.
  9. Serve over the brown rice.
  10. Enjoy!

Homemade Organic Copycat Rumboggies BBQ Sauce

This is my version of a southern favorite BBQ sauce.

Here’s What You’ll Need:

  • 1 tsp. Real Salt
  • 1/4 cup organic granulated cane sugar
  • 1/4 cup organic brown sugar
  • 3 cups Homemade Organic Brown Stock
  • 2 tsp. organic smoked paprika
  • 1/4 cup organic distilled white vinegar
  • 1/2 cup organic brown mustard
  • 1 cup organic tomato paste
  • 1 tsp. organic red pepper flakes
  • 1 Tbsp. Homemade Organic Chili Powder
  • 1/4 cup organic Worcestershire sauce (Annie’s is great)
  • 2 Tbsp. finely minced organic yellow onion
  • 3 organic garlic cloves, finely minced
  • 1 Tbsp. home rendered tallow

Here’s How I do it:

  1. Warm tallow in a stock pot until warm and bubbly.
  2. Add the garlic and onion to the tallow and saute for 2 minutes.
  3. Combine the remaining ingredients and bring to a boil.
  4. Reduce the heat and simmer for 2 hours, stirring occasionally and adding water if necessary.
  5. Allow to cool and puree, if desired.
  6. Enjoy!

Homemade Organic Chicago Dog Skillet Meal

I was inspired to create this recipe from Betty Crocker.

Here’s What You’ll Need:

  • 4 organic hot dogs, sliced (double check that they’re made without synthetic additives)
  • 1 Tbsp. home rendered lard or home rendered tallow
  • 2-1/2 cups Homemade Organic Beef Stock OR Homemade Organic Pork Stock
  • 2 cups organic short pasta (such as organic pipe rigate)
  • 1 cup organic whole milk
  • 1 cup organic shredded cheddar cheese
  • 1 tsp. Homemade Organic Chili Powder
  • 1 tsp. Real Salt
  • 1/2 cup diced organic yellow onion
  • 2 Tbsp. minced organic pepperoncini
  • 2 Tbsp. minced organic sweet pickles OR 2 Tbsp. organic sweet relish
  • 3 Tbsp. organic unbleached flour
  • 3 Tbsp. organic pasture butter

Here’s How I do it:

  1. Heat a deep skillet over medium-high heat.
  2. Add the lard or tallow and allow to get warm and bubbly.
  3. Saute the hot dog slices until lightly golden brown on each side; Remove from heat and set aside.
  4. Add the onions and saute for 5 minutes, or until translucent.
  5. Pour the stock into the skillet and bring to a boil.
  6. Add the pasta and allow to boil once more.
  7. Once boiling, reduce heat to a simmer.
  8. Season with salt, pepper, pepperoncini and sweet pickles/relish.
  9. Cook for about 12 minutes or until the noodles are al dente.
  10. Add the hot dog slices back into the skillet.
  11. Once the hot dog slices are warmed through, add the shredded cheese and blend thoroughly into the mixture.
  12. Add the roux and blend thoroughly into the mixture.
  13. Enjoy!

Homemade Organic Chi-Chi’s Garden Fresh Salsa

I loved Chi Chi’s salsa.  Now I can make it anytime that I want, and you can, too.  I modified this recipe to make my own organic version of this salsa.

Here’s What You’ll Need:

  • 15 fresh organic Roma/Plum tomatoes, diced
  • 1 bunch organic cilantro including stems, chopped fine with food processor
  • 1 large organic yellow onion diced
  • 2 fresh organic serrano peppers (If you substitute the pepper it won’t make the same salsa; I use 2 whole Homemade Organic Pickled Serranos and brine to taste, when I can’t find fresh organic serrano peppers)
  • 3 organic cloves of garlic
  • 1 bunch organic green onions chopped (green and white parts)
  • 2 organic limes or about 1/4 cup organic lime juice
  • 1 Tbsp. Real Salt
  • 3 Tbsp. organic ground cumin
  • 1 Tbsp. Homemade Organic Chili Powder
  • 1 Tbsp. organic garlic powder or organic granulated garlic
  • 1 tsp. organic pepper
  • 1 tsp. organic cane sugar

Here’s How I do it:

  1. Put about 1/3 of the diced tomatoes in a blender with the serrano peppers, garlic, lime juice and all of the spices.
  2. Blend them until it is a pinkish orangish looking thick liquid.
  3. Mix it back into the rest of the ingredients.
  4. Refrigerate to marry the flavors.
  5. Enjoy!

Homemade Organic Beef and Pork Meatloaf

I have adapted this recipe from Alton Brown.

Here’s What You’ll Need:

  • 3/4 cup Homemade Organic Breadcrumbs
  • 1/2 tsp. organic freshly-ground peppercorn blend
  • 1 tsp. organic granulated garlic
  • 1/2 tsp. organic cayenne pepper
  • 1 tsp. Homemade Organic Chili Powder`
  • 1 tsp. organic dried thyme
  • 1/2 organic yellow onion, roughly chopped
  • 1 organic carrot, peeled and broken
  • 3 whole cloves garlic, peeled
  • 1/2 organic red bell pepper
  • 1 lb. organic grass-fed ground chuck
  • 1 lb. organic pasture ground pork
  • 1 1/2 tsp. Real Salt
  • 1 organic pasture egg

For the Glaze:

Mix all glaze ingredients into a bowl until thoroughly blended.

Here’s How I do it:

  1. Pre-heat oven to 325° Fahrenheit.
  2. In a food processor bowl, combine breadcrumbs, Real Salt, black pepper, granulated garlic, cayenne pepper, chili powder, and thyme; Pulse until the mixture is of a fine texture and place this mixture into a large bowl.
  3. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed.
  4. Combine the vegetable mixture, ground beef, and ground pork with the bread crumb mixture.
  5. Season the meat mixture with salt.
  6. Add the egg and combine thoroughly, but avoid squeezing the meat.
  7. Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf.
  8. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray.
  9. Bake for 10 minutes.
  10. Spread the glaze all over the top of the meatloaf.
  11. Bake for 1-1/2 hours.
  12. Allow the meatloaf to rest for 5 minutes.
  13. Slice and enjoy!

Homemade Organic Southwestern Cowboy Casserole with Chicken

I was looking for recipes to make with Homemade Organic Cream of Mushroom Soup and came across this one which I’ve recreated as a chicken dish and adapted.

Here’s What You’ll Need:

  • 2 cups Homemade Organic Cream of Mushroom Soup
  • 1-3/4 cups organic tomato puree
  • 1 cup diced organic tomato
  • 1/2 cup diced organic yellow onion
  • 1/2 cup sliced organic celery
  • 1 cup diced organic bell peppers (any color will do)
  • 2 cups sliced organic cremini mushrooms
  • 2 cups uncooked organic shell pasta (elbow pasta is good, too)
  • 2 cups shredded Homemade Organic Chicken Roast
  • 2 Tbsp. organic Worcestershire sauce
  • 1 Tbsp Homemade Organic Chili Powder
  • 1 tsp. Real Salt (or to taste)
  • 1/2 cup organic shredded cheddar cheese
  • 2 Tbsp. home rendered lard, or schmaltz

Here’s How I do it:

  1. Preheat your oven to 400° F.
  2. Put the lard in a medium sized skillet over medium-high heat.
  3. Wait until the lard is warm-hot.
  4. Add the celery and saute for 2 minutes.
  5. Add the onion and saute  for 3 minutes more.
  6. Add the bell pepper and mushrooms and saute for an additional 4 minutes.
  7. Add the mixture to a 2 quart casserole dish.
  8. Stir in all the other ingredients, except the cheddar cheese.
  9. Bake COVERED for 50 – 60 minutes, or until pasta is tender.
  10. Remove from oven and sprinkle the cheddar cheese on top.
  11. Let the cheese melt before serving, approximately 5 minutes.
  12. Enjoy!



Homemade Organic Big Daddy’s Carolina BBQ Sauce

Here’s how I do it:

  1. Mix all ingredients (except soy sauce and butter)
  2. Simmer on low for 30 minutes (be careful not to simmer too long!)
  3. Stir in remaining ingredients and simmer for an additional 10 minutes.
