Homemade Organic Roasted Garlic Yellow Mustard

Here’s What You’ll Need:

  • 1/3 cup organic ground mustard
  • 2/3 cup organic distilled white vinegar
  • 1-1/3 cups unchlorinated and unfluoridated water
  • 3 Tbsp. organic unbleached white flour
  • 1 tsp.¬†organic arrowroot powder
  • 1 tsp. organic ground turmeric
  • 1 tsp. light pink mountain salt
  • 1 tsp. organic cane sugar
  • 1/4 tsp. organic roasted garlic powder

Here’s How I do it:

  1. Put all ingredients into a 2 quart heavy-bottomed stainless steel saucepan.
  2. Slowly bring to a boil over medium heat, whisking occasionally; As it gets closer to being finished, you’ll need to whisk more constantly.
  3. Once it has some small bubbles popping up in the sauce, immediately take if off the heat and allow to cool.
  4. Yields 2 cups of mustard.
  5. Enjoy!

Organic Garlic and Cheddar Twice-Baked Potatoes

This is one of my favorite things to make.  This is definitely worth the time and effort.

Here’s What You’ll Need:

  • 4 organic Russet Potatoes (at least medium sized)
  • 3 – 4 organic garlic cloves, minced finely
  • 1/2 cup organic full-fat cream cheese
  • 1/4 cup [half stick] organic pasture butter
  • 1 cup organic shredded cheddar cheese
  • organic freshly ground peppercorn blend, to taste
  • Course Sea Salt or Mountain Salt, to coat potatoes
  • Real Salt, to taste
  • organic olive oil, to coat potatoes

Here’s How I do it:

  1. Preheat the oven to 400 degrees.
  2. Coat the potatoes in olive oil.
  3. Take the coarse salt and rub all over the potatoes.
  4. Bake the potatoes in the oven for 1 hour at 400 degrees.
  5. Once the potatoes have finished baking, slice each one in half.
  6. Scoop out the center of the potato, leaving some of the insides to hold the potato skin together.
  7. Take all of the potato insides and place into a medium – sized mixing bowl.
  8. Add the sour cream, 1/2 cup of cheddar, butter, Real Salt, minced garlic, and freshly ground peppercorn blend to the mashed potato insides.
  9. Stir until everything is well incorporated.
  10. Place some of the mashed potato mixture into each of the potato skins.
  11. Sprinkle the remaining 1/2 cup of cheddar on top of the potatoes.
  12. Bake at 400 degrees for an additional 5 minutes, until the cheddar melts.
  13. Enjoy!
