Homemade Organic Freezer Chopped Hot Dog Mix

Here’s What You’ll Need:

  • 3 organic pasture eggs
  • 2 cups Homemade Organic Soft Bread crumbs
  • 2 cups chopped organic celery
  • 2 cups chopped organic yellow onion
  • 1 tsp. Real Salt
  • 3 lbs. organic hot dogs (with no synthetic additives), finely chopped

Here’s How I do it:

  1. In a large mixing bowl, beat eggs slightly.
  2. Stir in bread crumbs, celery, onion, and salt; Add meat and mix until well blended.
  3. Cook half of the mixture in a large skillet or the bottom of a wide stockpot until the meat is lightly browned; Repeat with remaining half of mixture.
  4. Allow the mixture to cool; Measure into 2-cup portions (wide-mouth pint jars with tight-fitting lids) and freeze.
  5. Yields 7 pints of mix.
  6. Enjoy!

Homemade Organic Confetti Casserole Topping

Here’s What You’ll Need:

  • 1 cup organic unbleached white flour
  • 2 tsp. Homemade Baking Powder
  • 1/2 tsp. Real Salt
  • 1 cup shredded organic cheddar cheese
  • 2 organic pasture eggs, slightly beaten
  • 1/2 cup grass-fed organic whole milk
  • 1 Tbsp. finely chopped organic green bell pepper
  • 1 Tbsp. finely chopped organic red bell pepper

Here’s How I do it:

  1. In a mixing bowl, combine the flour, baking powder and salt.
  2. Add the cheese, eggs, milk green pepper, red pepper and mix until well blended.
  3. Use as a topping for casseroles.
  4. Enjoy!

Homemade Organic Freezer Ground Pork Mix

Use one pint of this mix instead of 1 lb. ground pork in recipes.

Homemade Organic Mocha Yule Log Cake with Mini Meringue Mushrooms

This is a wonderful cake to make during the winter holiday season.  The cake is chocolate and the filling is coffee.

Here’s What You’ll Need:

Here’s How I do it:

  1. Make the Homemade Organic Mini Meringue Mushrooms, if using.
  2. In a medium sized mixing bowl, beat the organic eggs.
  3. Add sugar and beat until the mixture is thick; Stir in the vanilla extract.
  4. In a small mixing bowl, sift all of the dry ingredients.
  5. Into the egg mixture, fold in the sifted dry ingredients.
  6. Grease a heavy stainless steel 15x10x1″ baking pan with butter.
  7. Pour the batter into the greased baking pan and bake at 350° Fahrenheit for 25 minutes, or until top springs back when lightly pressed.
  8. Sprinkle a clean kitchen towel with cane sugar.
  9. When the cake is done, turn it onto the sugar lined towel.
  10. Roll the towel and the cake together making a layer of cake and a layer of towel.
  11. Wrap the towel tightly and place on a cooling rack and allow to cool completely.
  12. Make Homemade Organic Coffee Cream Frosting.
  13. Once the frosting is finished and the cake is cooled, unroll the cake carefully.
  14. Use half of the cream to evenly frost the cake where the towel once was; Reroll the cake.
  15. Frost the outside of the cake with the remaining frosting.
  16. Attach the Homemade Organic Mini Meringue Mushrooms, if using, to the outside of the cake.
  17. Sprinkle with chocolate curls and top with crushed pistachios (to look like moss), if desired.
  18. Chill for at least one hour, or until serving time.
  19. Slice crosswise into 1″ thick slices.
  20. Enjoy!

Homemade Organic Basic Cornbread Mix

Here’s What You’ll Need:

  • 5 cups organic yellow cornmeal
  • 6-1/2 cups organic unbleached flour
  • 1-1/4 cups organic cane sugar
  • 1/3 cup Homemade Baking Powder
  • 1 Tbsp. Real Salt
  • 1-1/4 cups [ 2-1/2 sticks] organic pasture butter

Here’s How I do it:

  1. In a very large mixing bowl, combine cornmeal, flour, sugar, baking powder and salt.
  2. Cut in butter until the mixture resembles coarse crumbs.
  3. Store in a covered air-tight container at room temperature for up to six weeks.  Freeze this mix If you intend to keep the mix longer than six weeks.

To make cornbread:

  • 2-1/2 cups Homemade Organic Cornbread Mix
  • 2 organic pasture eggs
  • 1 cup organic grass-fed whole milk
  1. Preheat the oven to 425° Fahrenheit.
  2. Stir the mix lightly and thoroughly before measuring.
  3. Measure 2-1/2 cups of mix:  Spoon the mix lightly into the measuring cup and level off evenly with the flat edge of a butter knife.
  4. Beat together eggs and milk; Add to premade mix.
  5. Beat everything together until smooth.
  6. Pour into a greased 9x9x2″ loaf pan.
  7. Bake for 20-25 minutes at 425° Fahrenheit.
  8. Enjoy!

Homemade Organic Cranberry and Nut Stuffing

Here’s What You’ll Need:

  • 2/3 cup chopped organic yellow onion
  • 2/3 cup chopped organic green bell pepper
  • 2/3 cup chopped organic celery
  • 1 cup organic cranberries
  • 7-8 cups stale or day old organic baguette cubes  (alternatively, one can lightly toast the bread cubes)
  • 1 cup Homemade Organic Chicken Stock or Homemade Organic Turkey Stock
  • 1/2 cup organic chopped walnuts
  • 2 tsp. organic dried rosemary
  • 2 tsp. organic dried thyme
  • 2 tsp. organic dried tarragon
  • 2 tsp. organic dried parsley
  • 1 tsp. Real Salt
  • 2 organic pastured eggs, beaten

Here’s How I do it:

  1. Add the vegetables to a mixing bowl.
  2. Rinse and drain the cranberries and add to the vegetable mixture.
  3. Stir in chicken or turkey stock, baguette cubes, walnuts, rosemary, thyme, tarragon, parsley, salt and egg.
  4. Stuff the turkey just before roasting; Sew, skewer or tie the opening and roast the turkey as usual.
  5. Alternatively, you can place the stuffing in a casserole dish and bake it at 325° for 15 – 20 minutes.

Homemade Organic Old-Fashioned Pumpkin Pie

Here’s What You’ll Need:

Here’s How I do it:

  1. Preheat the oven to 400° Fahrenheit.
  2. Combine the pastry mix with the water 1 Tbsp at a time until the pastry is formed.
  3. Roll the pastry into 1/8″ thickness and place into a deep 9″ pie plate.
  4. Trim the pastry dough 1″ below the rim of the pie plate.
  5. Crimp the edges of the dough around the top edge of the pie plate.
  6. Combine the pumpkin puree, pumpkin pie spice, sugar and salt.  Make sure to add the spice a little at a time to make sure that you get the level of spiciness you’d enjoy.
  7. Blend in the eggs, half-and-half and milk.
  8. Pour the pumpkin mixture into the pie shell.
  9. Bake for 50 minutes at 400° Fahrenheit.
  10. Enjoy!
