Homemade Organic Copycat Kraft Fresh Take Southwest Three Cheese

Here’s What You’ll Need:

For the Seasoned Breadcrumbs:

  • 12 Tbsp. Homemade Organic Panko-Styled Breadcrumbs; OR 12 Tbsp. Homemade Organic Fine Breadcrumbs
  • 2 tsp. organic extra-virgin olive oil
  • 2 tsp. Real Salt
  • 2 tsp. organic cane sugar
  • 1 tsp. organic chili pepper powder
  • 1/2 tsp. organic tomato powder
  • 1/2 tsp. organic ground cumin
  • 1/2 tsp. organic granulated onion
  • 1/2 tsp. organic granulated garlic
  • 1/2 tsp. organic paprika
  • 1 pinch organic celery seed

For the Cheese Blend:

  • 4 Tbsp. finely shredded organic Colby cheese
  • 4 Tbsp. strained and finely shredded organic mozzarella
  • 4 Tbsp. finely shredded organic cheddar cheese
  • 1 tsp. organic unbleached white flour

Here’s How I do it:

  1. Combine in a spice grinder the salt, sugar, chili pepper powder, tomato powder, cumin, onion, garlic, paprika and celery seed; Grind into a fine powder.
  2. In a small mixing bowl, stir the seasoning blend, breadcrumbs, olive oil and whey together until well blended; Set aside.
  3. In a medium mixing bowl, combine all cheeses and flour until blended and cheeses are completely coated; Set aside.

Homemade Organic Copycat Kraft Fresh Take Classic Four Cheese

I don’t know why Kraft named a cheese blend “Classic Four Cheese” when there are five cheeses in it, but that’s the way it is.

Here’s What You’ll Need:

For the Seasoned Breadcrumbs:

For the Cheese Blend:

  • 2-1/2 Tbsp. finely shredded organic Colby cheese
  • 2-1/2 Tbsp. drained and finely shredded organic cheddar cheese
  • 2-1/2 Tbsp. finely shredded organic Monterey Jack cheese
  • 2-1/2 Tbsp. drained and finely shredded organic mozzarella cheese
  • 2 Tbsp. organic unbleached white flour

Here’s How I do it:

  1. Combine in a spice grinder the Parmigiano Reggiano, salt, sugar, garlic, onion, paprika and turmeric; Grind into a fine powder.
  2. In a small mixing bowl, stir the seasoning blend, breadcrumbs, olive oil and whey together until well blended; Set aside.
  3. In a medium mixing bowl, combine all cheeses and flour until blended; Set aside.
  4. This mix is now ready to use in recipes.

Homemade Organic Copycat Kraft Fresh Take Spicy Chipotle Cheddar

Here’s What You’ll Need:

For the Seasoned Breadcrumbs:

  • 1-1/2 tsp. organic distilled white vinegar
  • 2 tsp. Real Salt
  • 1 tsp. organic cane sugar
  • 1 tsp. organic chipotle powder
  • 1/2 tsp. organic tomato powder
  • 1/2 tsp. organic granulated garlic
  • 1/2 tsp. organic granulated onion
  • 1/2 tsp. organic dried oregano
  • 1/2 tsp. organic smoked paprika
  • 1 pinch organic celery seed

For the Cheese Blend:

  • 4 Tbsp. finely shredded organic Colby cheese
  • 4 Tbsp. finely shredded organic mozzarella cheese
  • 4 Tbsp. finely shredded organic cheddar cheese
  • 2 Tbsp. organic unbleached white flour

  3. Combine all cheeses in another small stainless steel bowl along with the flour until the cheeses are completely coated; Set aside.
  4. This recipe yields 1-1/2 cups.

Homemade Organic Baked Margharita Penne Pasta

I have greatly modified this recipe from All Things Mac and Cheese.

Here’s What You’ll Need:

  • 2 cups dry organic penne pasta
  • 5 Tbsp. organic unbleached white flour
  • 3 Tbsp. organic pasture butter
  • 1 cup Homemade Organic Sweet Whey
  • 1 cup grass-fed organic whole milk
  • 1 cup shredded organic mozzarella cheese
  • 1 tsp. organic dried basil
  • 2 tsp. Real Salt, divided
  • 1/4 tsp. freshly ground organic white pepper
  • 1-1/2 cups freshly diced organic tomatoes
  • 3/4 cup sliced organic green onions
  • 1 recipe Homemade Organic Margharita Topping

Here’s How I do it:

  1. Preheat the oven to 350° Fahrenheit.
  2. Bring 1 gallon of water and 1 tsp. Real Salt to a boil; Add the pasta and cook for 6-8 minutes, not to al dente, drain and place into an 8x8x2″ baking dish.
  3. Melt the butter in a chef’s saucepan until warm and add the flour; Stir to combine and cook for 1 minute.
  4. Whisk in the whey/milk little by little until all of it is incorporated into the roux.
  5. Add the mozzarella a handful at a time and stir until melted.
  6. Stir in the salt, basil and white pepper until well blended.
  7. Add the tomatoes, green onions and cheese sauce to the pasta and stir until well comined.
  8. Sprinkle the Homemade Organic Margharita Topping over the casserole.
  9. Bake for 25 – 30 minutes at 350° Fahrenheit.
  10. Enjoy!

 

Homemade Organic Italian Sausage Lasagna

Here’s What You’ll Need:

  • 1 recipe Homemade Organic Italian Sausage Lasagna Sauce
  • 9 organic dry lasagna noodles, unbroken
  • 15 oz. [1 tub] organic ricotta cheese
  • 2 organic pastured eggs
  • 1 lb. organic mozzarella cheese, shredded
  • 1/2 cup grated organic parmigiano reggiano
  • 6 Tbsp. minced organic fresh Italian flat-leaf parsley OR 2 Tbsp. organic dried parsley flakes
  • 1 tsp. Real Salt
  • 1/2 tsp. organic freshly ground peppercorn blend
  • 1 Tbsp. home rendered lard

Here’s How I do it:

  1. Preheat oven 375° Fahrenheit.
  2. Prepare the Homemade Organic Italian Sausage Lasagna Sauce.
  3. Bring 1 gallon of water to a boil in a 2-gallon stock pot.
  4. Add a pinch of Real Salt to flavor the noodles.
  5. Add lasagna noodles and cook for HALF of the time the package instructs, approximately 6.5 minutes.
  6. Add the half-cooked lasagna noodles into a large mixing bowl filled with COLD unchlorinated and unfluoridated water, set aside.
  7. Add 2 eggs to the ricotta, mix well.
  8. Season the ricotta with Real Salt, parsley, and pepper; Mix well and set aside.
  9. Grease a 9×13″ casserole dish with lard.
  10. Place a layer of sauce on the bottom of the casserole.
  11. Place 3 noodles side-by-side on top of the sauce.
  12. Spread the ricotta mixture on top of the noodles.
  13. Sprinkle 1/3 of the cheese mixture on top of the ricotta.
  14. Repeat steps 10-13 until all three layers are finished.
  15. Bake uncovered 25-30 minutes until top is brown and the sides are bubbly.
  16. Enjoy!

 

Homemade Organic Bacon Double Cheeseburger Dip

I have adapted this from Closet Cooking.  I found that keeping this dip warm in a small Crockpot, or something similar, is better than allowing this dip to cool.

Here’s What You’ll Need:

Here’s How I do it:

  1. Preheat the oven to 350° Fahrenheit
  2. If you’re using pork belly, please season with salt and pepper to taste.
  3. Cook the bacon in the pan until crispy, about 6-10 minutes; Set aside and drain all but a tablespoon of the grease, reserve the remaining grease for another use.
  4. Cook the ground beef in the bacon pan over medium heat; Set aside.
  5. Add the seasoning salt and onion; Saute until tender, about 5 minutes.
  6. Add the garlic and saute until fragrant, about 1 minute.
  7. Mix the ground beef, bacon, onions, garlic, cream cheese, sour cream, mayonnaise, mozzarella, cheddar, worcestershire sauce, and ketchup into a 1 qt. baking dish.
  8. Bake in a preheated 350° Fahrenheit oven until the top starts turning a light golden brown and then sides are bubbling, about 20-30 minutes.
  9. Transfer to a 1 qt. Crockpot on the warm setting.
  10. Keep this dip warm, but not hot, for best results.
  11. Serve with thick potato chips, toasted baguette slices, or butter crackers.
