Homemade Organic Hamburger Helper Bacon Cheeseburger

Here’s How I do it:

  1. In a deep frying pan with lid, cook the bacon until crispy; Reserve the bacon grease in the pan, remove the bacon from the pan, cut it into small pieces, and set aside.
  2. If using Homemade Organic Freezer Beef Mix or Homemade Organic Freezer Ground Pork Mix:  Pour 1/2 cup water into a deep frying pan with lid; Add the frozen meat mix and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover, then add the mushrooms (if using), tomatoes, and garlic; Break up the frozen chunks into smaller pieces. Cover and simmer for an additional 5 minutes.  Proceed with step 5.
  3. Brown the meat in the frying pan used for the bacon until halfway done.
  4. Add the tomatoes, onions, mushrooms (if using) and garlic, then saute with the ground meat for 6 to 7 minutes until the onions are clear.
  5. Pour in the beef stock, vegetable stock, whey and milk.
  6. Add the macaroni or cavatelli, stir well.
  7. Stir in the salt, pepper, turmeric, and cayenne (if using).
  8. Slowly bring the mixture to a boil then simmer, covered, until the noodles are al-dente, approximately 16-22 minutes; Stir occasionally.
  9. Stir in the cheddar, ricotta and blue cheeses, allowing them to melt into the dish.
  10. Enjoy!

Homemade Organic Chef Boyardee Beefaroni

Here’s How I do it:

  1. Brown the ground beef in a large skillet until browned.
  2. Pour in the tomato sauce, water, and salt; Stir until well blended.
  3. Carefully add the pasta to the pot, and bring to a boil, stirring often to prevent the pasta from sticking.
  4. Once boiling, cover and cook for 18-22 minutes, stirring every 2-3 minutes to prevent sticking.
  5. After the pasta is al dente, add the cheese paste and stir well to combine.
  6. Enjoy!

Homemade Organic Pasta e Fagioli

This recipe is inspired by Olive Garden’s Pasta e Fagioli recipe.  This is an Italian pasta and bean soup. I found Damn Delicious‘ recipe; I modified it to make it organic and made from scratch.

Here’s What You’ll Need:

  • 1 cup dry organic kidney beans
  • 1 cup dry organic cannellini beans
  • 1 cup organic cavatelli [baby shell] pasta (or other small shaped pasta)
  • 2 cups cooked Homemade Organic Italian Sausage
  • 3 cloves organic garlic, minced
  • 1 small organic yellow onion, diced
  • 3 small or 2 medium organic carrots, sliced
  • 2 ribs organic celery, sliced
  • 6 cups Homemade Organic Pork Stock, Homemade Organic Beef Stock, Homemade Organic Brown Stock or Homemade Organic Chicken Stock  (a combination works, too)
  • 6 cups unfluoridated and unchlorinated water, divided
  • 2 cups organic crushed tomatoes
  • 2 organic beefsteak tomatoes, diced [2 cups] OR  2 cups organic diced tomatoes
  • 1 Tbsp. organic fresh basil OR *1 tsp. organic dried basil
  • 1 Tbsp. organic fresh oregano OR *1 tsp organic dried oregano
  • 2-1/4 tsp. organic fresh thyme OR *3/4 tsp. dried thyme
  • 1 Tbsp. Real Salt
  • 1 tsp. organic freshly ground peppercorn blend

Here’s How I do it:

  1. Place 3 cups of water and stock into an 8 quart stock pot and bring to a boil.
  2. Meanwhile rinse the beans thoroughly.
  3. Add the beans to the pot;  Do not season with salt until the end of the cooking process or the beans might not get soft.
  4. Reduce the heat to medium, cover and cook for 1 hour.
  5. Add the crushed tomatoes, diced tomatoes, carrots, celery, onion, garlic, basil, oregano and thyme to the pot and return to a boil.
  6. Reduce to a simmer and cook for 30 minutes.
  7. Add the pasta and remaining 3 cups of water to the pot.
  8. Bring the soup to a boil once again.
  9. Reduce the heat to a slow simmer and cook for an additional 15 minutes, or until the pasta and vegetables are tender.
  10. When there’s ten minutes of cooking time left, add the sausage, salt and pepper to the pot.
  11. Enjoy!

Homemade Organic Chicago Dog Skillet Meal

I was inspired to create this recipe from Betty Crocker.

Here’s What You’ll Need:

  • 4 organic hot dogs, sliced (double check that they’re made without synthetic additives)
  • 1 Tbsp. home rendered lard or home rendered tallow
  • 2-1/2 cups Homemade Organic Beef Stock OR Homemade Organic Pork Stock
  • 2 cups organic short pasta (such as organic pipe rigate)
  • 1 cup organic whole milk
  • 1 cup organic shredded cheddar cheese
  • 1 tsp. Homemade Organic Chili Powder
  • 1 tsp. Real Salt
  • 1/2 cup diced organic yellow onion
  • 2 Tbsp. minced organic pepperoncini
  • 2 Tbsp. minced organic sweet pickles OR 2 Tbsp. organic sweet relish
  • 3 Tbsp. organic unbleached flour
  • 3 Tbsp. organic pasture butter

Here’s How I do it:

  1. Heat a deep skillet over medium-high heat.
  2. Add the lard or tallow and allow to get warm and bubbly.
  3. Saute the hot dog slices until lightly golden brown on each side; Remove from heat and set aside.
  4. Add the onions and saute for 5 minutes, or until translucent.
  5. Pour the stock into the skillet and bring to a boil.
  6. Add the pasta and allow to boil once more.
  7. Once boiling, reduce heat to a simmer.
  8. Season with salt, pepper, pepperoncini and sweet pickles/relish.
  9. Cook for about 12 minutes or until the noodles are al dente.
  10. Add the hot dog slices back into the skillet.
  11. Once the hot dog slices are warmed through, add the shredded cheese and blend thoroughly into the mixture.
  12. Add the roux and blend thoroughly into the mixture.
  13. Enjoy!

Homemade Organic Chicken, Broccoli and Cheese Skillet

I found the original recipe here.  I have adapted it to make it organic and synthetic-chemical free.

Here’s How I do it:

  1. Add broccoli, broth, soup, salt, pepper, garlic and pasta to a medium-sized deep skillet; Bring to a boil.
  2. Reduce heat to lowest setting, cover.
  3. Simmer for 15-20 minutes, or until pasta is tender; Stir occasionally to prevent sticking.
  4. Add the chicken about 10 minutes before the pasta is done.  Stir well and add water, if needed.
  5. Check near the end of cooking and add a small amount of water, if needed, and stir well to combine in the mixture.
  6. Add cheese during last two minutes and blend into mixture.
  7. Enjoy!

Homemade Organic Hamburger Helper Cheesy Italian Shells

Here’s What You’ll Need:

  • 1 lb. grass-fed ground beef or 1 pint Homemade Organic Freezer Ground Beef Mix
  • 1/2 cup Homemade Beef Stock
  • 1/2 cup Homemade Vegetable Stock
  • 1/2 cup organic crushed tomatoes
  • 1-1/4 cups organic grass-fed whole milk
  • 1/4 cup Homemade Organic Sweet Whey
  • 2 cups organic medium shell pasta
  • 3/4 cup diced organic yellow onion
  • 3/4 cup diced organic tomatoes (optional)
  • 3/4 cup diced organic bell pepper (optional)
  • 2-3 organic garlic cloves, minced (optional)
  • 2 tsp. Real Salt
  • 2 tsp. organic dried basil
  • 1 tsp. organic dried oregano
  • 1 tsp. organic Italian seasoning (optional)
  • 1 tsp. organic paprika
  • 1/2 tsp. freshly ground organic peppercorn blend
  • 1/4 tsp. organic turmeric
  • 1-1/2 cup organic cheddar cheese, shredded
  • 1/2 cup Homemade Organic Ricotta Cheese

Here’s How I do it:

  1. If using Homemade Organic Freezer Beef Mix:  Pour 1/4 cup water into a deep saucepan with lid; Add the frozen beef mix and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces.  Add the garlic; Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  2. Brown the beef in a saucepan until halfway done.
  3. Add the onions and garlic and saute with the ground beef for 6 to 7 minutes until the beef is brown and the onions are clear.  If not using the beef mix, proceed with step 4.
  4. Add the diced tomatoes, pasta, stock and milk, stir well.
  5. Add the Italian seasoning, salt and freshly ground pepper, stir well.
  6. Slowly bring the mixture to a boil then simmer until the noodles are al-dente, approximately 12 -25 minutes.
  7. Add the cheddar cheese and allow to melt into the dish.
  8. Enjoy!

 

Homemade Organic Whole Grain Chicken Helper Lemon and Herb Chicken

I have adapted this recipe to use shredded chicken or Homemade Organic Freezer Ground Chicken Mix.

Here’s What You’ll Need:

Here’s How I do it:

  1. If using Homemade Organic Freezer Ground Chicken Mix:  Pour 1/4 cup water into a deep saucepan with lid; Add the frozen chicken mix  and simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces.  Add garlic (if using) and simmer for an additional 5 minutes.  Add the schmaltz and proceed with step 4.
  2. Heat a saucepan, preferably one with 2″ sides, over medium-high heat.
  3. Add the schmaltz to the pan and allow to warm up until nice and bubbly.
  4. Add the shredded chicken to the pan and allow to cook until lightly browned.
  5. Add the beef and vegetable stock and pasta to the skillet.
  6. Add the garlic, salt, pepper, parsley, basil, turmeric, peas and carrots to the frying pan.
  7. Bring to a boil then reduce the heat to low, cover, and simmer for 18 – 25 minutes.
  8. While the noodles are cooking, prepare the Homemade Organic Lemon Glaze using organic light brown sugar;Add molasses, and additional light brown sugar, if necessary, to the glaze.
  9. Drizzle the glaze over the noodle mixture and stir until well combined.
  10. Enjoy!
