Homemade Organic Pumpkin Pie Overnight Oats

This is a great on-the-go breakfast when placed into a wide mouth pint Mason jar secured with a lid.

  1. Combine all ingredients into a wide mouth pint Mason jar; Stir until well combined.
  2. Cover the jar with a tight fitting lid.
  3. Refrigerate overnight.
  4. Enjoy!

Homemade Organic Old-Fashioned Pumpkin Pie

Here’s What You’ll Need:

Here’s How I do it:

  1. Preheat the oven to 400° Fahrenheit.
  2. Combine the pastry mix with the water 1 Tbsp at a time until the pastry is formed.
  3. Roll the pastry into 1/8″ thickness and place into a deep 9″ pie plate.
  4. Trim the pastry dough 1″ below the rim of the pie plate.
  5. Crimp the edges of the dough around the top edge of the pie plate.
  6. Combine the pumpkin puree, pumpkin pie spice, sugar and salt.  Make sure to add the spice a little at a time to make sure that you get the level of spiciness you’d enjoy.
  7. Blend in the eggs, half-and-half and milk.
  8. Pour the pumpkin mixture into the pie shell.
  9. Bake for 50 minutes at 400° Fahrenheit.
  10. Enjoy!

Homemade Organic Pumpkin Puree

Here’s What You’ll Need:

  • 1 [5 lb.] organic baking pumpkin
  • 2 quarts unchlorinated and unfluoridated water

Here’s How I do it:

  1. Remove the seeds and stringy parts of the pumpkin; Reserve the seeds for Homemade Organic Toasted Pumpkin Seeds and the stringy parts for Homemade Organic Pumpkin Spice Syrup
  2. Cut the pumpkin into 2″ cubes.  Try to keep the chunks the same size so that they’ll cook evenly.
  3. In a stockpot over high heat, bring pumpkin cubes and water to a boil.
  4. Reduce to a simmer and cook the pumpkin for 20 minutes.
  5. Strain the mixture and reserve the cooking water (also for Homemade Organic Pumpkin Spice Syrup).
  6. Put the cooked pumpkin chunks into a blender. (If using a glass blender, temper the glass by putting really hot water into it and dumping it back out before adding the pumpkin chunks.)
  7. Blend until the pumpkin becomes a thick puree, adding the cooking liquid if necessary.
  8. Pour into jars with tight fitting lids and chill.
  9. Enjoy!
