Homemade Organic Slow Cooker Chunky Taco Dip

Here’s What You’ll Need:

  • 1 lb. grass-fed organic ground beef
  • 1/4 cup Homemade Organic Beef Stock
  • 1/4 cup reserved kidney bean liquid
  • 1 cup organic crushed tomatoes
  • 2 cups organic frozen corn
  • 2 cups cooked organic kidney beans, drained
  • 2 cups cooked organic black beans, drained
  • 1 cup freshly diced organic tomato  [1 medium]
  • 1 cup diced organic red onion
  • 4 organic garlic cloves, minced
  • 2-3 Tbsp. minced Homemade Organic Pickled Jalapenos; OR Homemade Organic Pickled Serranos
  • 2 Tbsp. Homemade Organic Taco Seasoning, divided
  • 2 tsp. Real Salt
  • 4 Tbsp. organic masa harina (corn flour); OR unbleached organic white flour mixed with 4 Tbsp. unchlorinated and unfluoridated water (slurry)
  • 1/4 cup finely chopped fresh organic cilantro; OR 1 Tbsp. organic dried cilantro (optional)
  • hot sauce (optional)
  • organic tortilla chips, for serving

Here’s How I do it:

Slow Cooker:

  1. Add all ingredients except the slurry and tortilla chips and cook on low for 5-6 hours; Add the slurry 30 minutes before the cook time ends, and stir until well combined.
  2. Serve from the slow cooker with tortilla chips on the side for dipping.
  3. This recipe yields approximately 11 cups of dip.
  4. Enjoy!

Warmers:

  1. Cook the ground beef and 1 Tbsp. taco seasoning in a large skillet until browned, breaking up any large chunks.
  2. Add the beef stock, bean drippings, crushed tomatoes, corn, kidney beans, black beans, garlic, hot peppers, 1 Tbsp. taco seasoning, and salt; Stir to combine well.
  3. Increase the heat to boiling, then reduce and allow to simmer for 20  minutes; Add the slurry to the skillet and allow to simmer until thickened.
  4. Transfer the dip to your warmer.
  5. Serve from the warmer with tortilla chips on the side for dipping.
  6. This recipe yields approximately 11 cups of dip.
  7. Enjoy!

This would also be delicious as a burrito, taco, taco salad, taco bowl, etc.

Homemade Organic Apple and Herb Pork Chops

Here’s What You’ll Need:

  • 6 organic pastured pork chops
  • 1 tsp. organic dried thyme
  • 1 tsp. organic dried rosemary
  • 1 tsp. organic dried marjoram
  • 4 medium organic tart apples, cut into 1″ dice
  • 1 large organic red onion, cut into 1″ dice
  • 3 Tbsp. organic brown sugar
  • 1 cup organic 100% apple juice

Here’s  How I do it:

  1. Preheat oven to 350° Fahrenheit.
  2. Heat a Dutch oven over medium-high heat.
  3. Sear the pork chops for 5 minutes on each side; Remove from heat.
  4. Arrange the onion and apple pieces all around the pork chops.
  5. Carefully pour in the apple juice.
  6. Sprinkle the herbs and brown sugar on top.
  7. Cover the Dutch oven and bake for 1 hour and 15 minutes.
  8. Remove the pork chops and place on a warm serving platter.
  9. Bring the juices to a boil in the Dutch oven; Reduce by half.
  10. Serve the pork chops with the reduction sauce.
  11. Enjoy!

Homemade Organic Barbequed Pulled Turkey

Here’s What You’ll Need:

  • 4 cups shredded cooked organic dark-meat turkey
  • 3 cups Homemade Organic Copycat Rumboggies BBQ Sauce
  • 3 cups Homemade Organic Turkey Stock
  • 1 cup diced organic red onion
  • 1 cup diced organic green bell pepper
  • 1 cup sliced organic celery
  • 2-3 Tbsp. home rendered turkey schmaltz
  • 7 oz. [1 jar] organic tomato paste
  • 1 tsp. Real Salt
  • 1/4 tsp. organic freshly ground peppercorn blend

Here’s How I do it:

Stovetop:

  1. Heat a stockpot over medium-high heat.
  2. Add the schmaltz and allow to get warm and bubbly.
  3. Add the celery to the schmaltz and saute for 4-5 minutes.
  4. Add the onion and bell pepper to the stockpot and saute for 4-5 minutes.
  5. Pour the stock and the BBQ sauce into the stockpot; Stir well to combine.
  6. Bring the mixture to a boil; Reduce heat and simmer for 2 hours.
  7. Enjoy!

Crock Pot:

  1. Add all ingredients to a 4-5 qt slow cooker.
  2. Cook over low heat for 8-10 hours.

Homemade Organic Italian Salad

Here’s What You’ll Need:

  • 1 head organic Romaine lettuce, torn
  • 1-1/2 cups shredded organic radicchio or shredded organic purple cabbage
  • 2 organic Roma tomatoes, halved then sliced
  • 1/2 small organic red onion, sliced into thin rings
  • 1 cup sliced organic cremini mushrooms
  • 1 medium organic carrot, shredded
  • 1/4 cup sliced organic pepperoncini
  • 1/2 cup organic black olives
  • 1 Tbsp. fresh organic oregano OR *1 tsp. organic dried oregano
  • 1/4 cup grated organic parmigiano reggiano cheese
  • 1/2 cup (more or less to taste) Simple Homemade Organic Italian Dressing, Homemade Organic Fresh Italian Dressing or Homemade Organic Creamy Italian Dressing

Here’s How I do it:

  1. Add all of the ingredients except for the dressing.
  2. Toss to combine ensuring that it’s well mixed.
  3. Place the salads in bowls and drizzle with dressing.
  4. Enjoy!
