Homemade Organic Olive Tomato Sauce

Here’s What You’ll Need:

  • 3 Tbsp. Homemade Organic Lard; OR organic olive oil
  • 1 medium organic yellow onion, diced small
  • 1 medium organic tomato, diced small
  • 1 cup organic crushed tomatoes
  • 1 cup unchlorinated and unfluoridated water
  • 1 Tbsp. minced organic pickled Kalamata olives
  • 1 Tbsp. minced organic pickled green olives stuffed with garlic
  • 1/4 cup organic Kalamata olive brine (from the jar of pickled olives)
  • 1/4 cup organic green olive stuffed with garlic brine (from the jar of pickled olives)
  • 2 tsp. Real Salt

Here’s How I do it:

  1. Simmer the onions in the lard/oil until translucent, about 5-6 minutes.
  2. Add the tomatoes, crushed tomatoes, water, green olive with garlic brine, Kalamata olive brine, Kalamata olives, green olives with garlic, and salt.
  3. Simmer for 60-90 minutes, or until desired thickness is reached; Puree if desired.
  4. Enjoy!

Homemade Organic Spicy Italian Tomato Sauce

Here’s What You’ll Need:

  • 3 Tbsp. Homemade Organic Lard; OR organic olive oil
  • 1 medium organic yellow onion, diced small
  • 1 medium organic tomato, diced small
  • 1 cup organic crushed tomatoes
  • 1 cup unchlorinated and unfluoridated water
  • 1/4 cup sliced organic pickled pepperoncini
  • 1/2 cup organic peperoncini brine (from the jar of pickled pepperoncini)
  • 2 tsp. Real Salt

Here’s How I do it:

  1. Simmer the onions in the fat/oil until translucent, about 5-6 minutes.
  2. Add the tomatoes, crushed tomatoes, water, pickled peperoncini brine, pepperoncini, and salt.
  3. Simmer for 60-90 minutes, or until desired thickness is reached.
  4. Enjoy!

Homemade Organic Three-Bean Enchiladas with Red Sauce and Sour Cream Sauce

Here’s What You’ll Need:

Here’s How I do it:

To Prepare Beans:

  1. Place all dry beans, salt, chipotle seasoning, schmaltz, chicken stock and vegetable stock in a 2 quart saucepan; Cover with 2″ water.
  2. Bring beans to a boil, then reduce to a simmer, uncovered, for 1-1/2 to 2 hours (or until beans are tender), stirring and adding water occasionally.

To Assemble Enchiladas:

  1. Preheat the oven to 350° Fahrenheit.
  2. Place some of the red sauce on the bottom of a 9 x 13″ casserole.
  3. In a line in the middle of a tortilla, place drained bean mixture, tomatoes, onions, sour cream sauce and shredded cheese, roll and place seam-side-down in the casserole; Repeat until all tortillas are completed.
  4. Spread the remaining sour cream sauce over the top of the enchiladas.
  5. Spread the enchilada sauce on top of the cream sauce.
  6. Sprinkle any remaining onions on top of the sauces.
  7. Sprinkle the remaining cheese on top of the onion.
  8. Bake at 350° Fahrenheit for 25-30 minutes, or until the cheese is melted and sides are bubbly.
  9. Enjoy!

 

Homemade Organic Pomodoro Sauce

Here’s What You’ll Need:

  • 1 large organic tomato, diced small
  • 1/2 small organic yellow onion, finely chopped
  • 2-3 cloves organic garlic (optional)
  • 3 Tbsp. organic pasture butter
  • 3 Tbsp. organic olive oil
  • 1 cup organic crushed tomatoes
  • 1/2 cup Homemade Organic Chicken Stock (Homemade Organic Beef Stock or Homemade Organic Vegetable Stock may be substituted, if desired.)
  • 1 tsp. organic dried basil
  • 1 tsp. Real Salt
  • 1 Tbsp. organic cane sugar
  • 2 Tbsp. jarred organic tomato paste

Here’s How I do it:

  1. In a large saucepan over medium high heat, heat the butter and olive oil until warm and bubbly; Add the onions and cook for 4-5 minutes, or until they begin to look translucent.
  2. Add the diced tomatoes to the onions; Cover and simmer on low for 10 minutes.
  3. Remove the lid; Add the tomato paste, sugar, salt and dried basil then stir to combine well.
  4. Simmer, uncovered, for an additional 30 minutes over low heat.  This sauce needs to be thick or it will not stick to the pasta.
  5. Enjoy!

Homemade Organic Slow Cooker Chunky Taco Dip

Here’s What You’ll Need:

  • 1 lb. grass-fed organic ground beef
  • 1/4 cup Homemade Organic Beef Stock
  • 1/4 cup reserved kidney bean liquid
  • 1 cup organic crushed tomatoes
  • 2 cups organic frozen corn
  • 2 cups cooked organic kidney beans, drained
  • 2 cups cooked organic black beans, drained
  • 1 cup freshly diced organic tomato  [1 medium]
  • 1 cup diced organic red onion
  • 4 organic garlic cloves, minced
  • 2-3 Tbsp. minced Homemade Organic Pickled Jalapenos; OR Homemade Organic Pickled Serranos
  • 2 Tbsp. Homemade Organic Taco Seasoning, divided
  • 2 tsp. Real Salt
  • 4 Tbsp. organic masa harina (corn flour); OR unbleached organic white flour mixed with 4 Tbsp. unchlorinated and unfluoridated water (slurry)
  • 1/4 cup finely chopped fresh organic cilantro; OR 1 Tbsp. organic dried cilantro (optional)
  • hot sauce (optional)
  • organic tortilla chips, for serving

Here’s How I do it:

Slow Cooker:

  1. Add all ingredients except the slurry and tortilla chips and cook on low for 5-6 hours; Add the slurry 30 minutes before the cook time ends, and stir until well combined.
  2. Serve from the slow cooker with tortilla chips on the side for dipping.
  3. This recipe yields approximately 11 cups of dip.
  4. Enjoy!

Warmers:

  1. Cook the ground beef and 1 Tbsp. taco seasoning in a large skillet until browned, breaking up any large chunks.
  2. Add the beef stock, bean drippings, crushed tomatoes, corn, kidney beans, black beans, garlic, hot peppers, 1 Tbsp. taco seasoning, and salt; Stir to combine well.
  3. Increase the heat to boiling, then reduce and allow to simmer for 20  minutes; Add the slurry to the skillet and allow to simmer until thickened.
  4. Transfer the dip to your warmer.
  5. Serve from the warmer with tortilla chips on the side for dipping.
  6. This recipe yields approximately 11 cups of dip.
  7. Enjoy!

This would also be delicious as a burrito, taco, taco salad, taco bowl, etc.

Homemade Organic Meatloaf Burger

Here’s What  You’ll Need:

Here’s How I do it:

  1. Warm a medium-sized skillet over medium-high heat.
  2. Add lard or tallow to the skillet and allow to get warm and bubbly.
  3. Fry the meatloaf slices until they are lightly golden brown on each side; Set aside.
  4. Assemble the burgers by spreading on the ketchup, mayonnaise and/or mustard on the inside of the top and/or bottom bun.
  5. Then place a cooked meatloaf slice on the bottom bun.
  6. Add the cheese, lettuce, onion, tomato and/or pickles to the burger.
  7. Place the top bun on top of the burger.
  8. Repeat steps 3-7 until all burgers are made.
  9. Enjoy!

 

Homemade Organic Hamburgers

Here’s What You’ll Need:

Here’s How I do it:

  1. Warm a medium-sized skillet over medium-high heat.
  2. Add the burger patties to the pan.
  3. Cook until the patties are well done and set aside.
  4. Assemble the burgers by spreading on the ketchup, mayonnaise and/or mustard on the inside of the top and/or bottom bun.
  5. Then place a cooked hamburger patty on the bottom bun.
  6. Add the cheese, lettuce, onion, tomato and/or pickles to the burger.
  7. Place the top bun on top of the burger.
  8. Repeat steps 3-7 until all burgers are made.
  9. Enjoy!
