Homemade Organic Ground Pork Taco Meat

I have greatly adapted the recipe from John D Lee.

Here’s How I do it:

  1. Pour 1/4 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen pork mix and simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces, add the onion and minced garlic, then cover again to simmer for an additional 5 minutes.
  2. Add the stock and jalapeno brine to the skillet and stir to mix well.
  3. Pour in the seasonings and mix until well combined.
  4. Over medium heat, uncovered, simmer until most of the liquid is evaporated and the meat mixture thickens.
  5. Enjoy!

Homemade Organic Hamburger Helper Spaghetti

Here’s What You’ll Need:

Here’s How I do it:

  1. If using Homemade Organic Freezer Meat Mix:  Pour 1/2 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen beef mix, bell pepper (if using) and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces and add the tomatoes, mushrooms (if using), and garlic.  Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  2. Brown the beef in a saucepan until halfway done.
  3. Add the bell pepper (if using) and onions, then saute with the ground beef for 5 minutes; Add the tomatoes, mushrooms (if using), and garlic, then saute until the beef is brown and the onions are clear.
  4. Pour in the beef/pork/chicken stock, vegetable stock, whey and tomato paste.
  5. Stir in the basil, Itaian seasoning, Real Salt, cane sugar paprika, and turmeric until well blended.
  6. Carefully add the broken spaghetti noodles; Make sure they are covered with liquid.
  7. Slowly bring the mixture to a boil then simmer, covered, until the noodles are al-dente, approximately 18-22 minutes, stirring occasionally.
  8. Garnish with grated organic Parmigiano Reggiano cheese and/or sprigs of organic fresh parsley, if desired.
  9. Enjoy!

Homemade Organic Hamburger Helper Lasagna

  1. If using Homemade Organic Freezer Meat Mix:  Pour 1/2 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen mix, and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces and add the tomatoes and garlic.  Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  2. Brown the beef in a saucepan until halfway done, or warm up the Italian sausage with some water, if using.
  3. Add the tomatoes and onions, then saute with the ground beef for 5 minutes; Add the mushrooms and saute until the beef is brown and the onions are clear.
  4. Pour in the beef  or pork stock, vegetable stock, whey and milk.
  5. Add the broken lasagna noodles or farfalle pasta; Stir well.
  6. Stir in the salt, sugar, basil, paprika, oregano, turmeric and red pepper flakes (if using) until well blended.
  7. Slowly bring the mixture to a boil then simmer, covered, until the noodles are al-dente, approximately 18-22 minutes. Stir in the ricotta, cheddar (if using), and Parmigiano Reggiano cheeses and allow them to melt into the dish.
  8. Garnish with sprigs of organic fresh parsley, if desired.
  9. Enjoy!

Homemade Organic Slow Cooker Spaghetti

Here’s How I do it:

  1. Add the beef and sausage mixes to a deep frying pan with lid; Pour in 1/2 cup water and bring to a boil.
  2. Once boiling, reduce the heat and simmer for 15 minutes; Break up any large chunks, cover, and simmer for an additional 5 minutes.
  3. Add the meat mixes to a 5-6 quart slow cooker, along with remaining ingredients (except raw spaghetti).
  4. Heat in slow cooker on LOW for 6 to 8 hours, or on HIGH for 3-5 hours.
  5. Approximately 30-40 minutes before the end of cooking time, cook the raw spaghetti in boiling water (with a pinch of salt) until halfway cooked, approximately 8-13 minutes.
  6. Serve the sauce over the spaghetti.
  7. Enjoy!

Homemade Organic Hamburger Helper Cheesy Italian Beef

  1. If using Homemade Organic Freezer Beef Mix:  Pour 1/2 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen beef mix, tomatoes and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces and add the garlic.  Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  2. Brown the beef in a saucepan until halfway done.
  3. Add the tomatoes and onions, then saute with the ground beef for 5 minutes; Add the garlic and saute until the beef is brown and the onions are clear.
  4. Pour in the beef stock, vegetable stock, whey and milk.
  5. Add the fusilli pasta, stir well.
  6. Stir in the salt, basil, paprika, oregano, fennel seed and turmeric until well blended.
  7. Slowly bring the mixture to a boil then simmer, covered, until the noodles are al-dente, approximately 18-22 minute. Stir in the ricotta, cheddar (if using), Pecorino Romano and Parmigiano Reggiano cheeses and allow them to melt into the dish.
  8. Garnish with sprigs of organic fresh parsley, if desired.
  9. Enjoy!

 

Homemade Organic Hamburger Helper Classic Cheesy Jambalaya

Here’s How I do it:

  1.  If using Homemade Organic Freezer Ground Beef Mix, Homemade Organic Freezer Ground Pork Mix, or Homemade Organic Freezer Ground Chicken Mix:  Pour 1/4 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen meat mix, bell pepper, celery (if using), tomatoes and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces and add the garlic and jalapenos.  Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  2. Brown the meat in a saucepan until halfway done.
  3. Add the bell peppers, tomatoes and onions to the skillet then saute with the ground meat for 5 minutes; Add the garlic and jalapenos then saute until the meat is fully cooked and the onions are clear.
  4. Pour in the chicken stock, shrimp stock, whey and milk.
  5. Add the brown rice and stir well.
  6. Stir in the salt, Homemade Organic Cajun Dry Rub, paprika and turmeric until well blended.
  7. Slowly bring the mixture to a boil then simmer, covered, until the pasta or rice is fully cooked, approximately 40-45 minutes for rice and 16-22 minutes for pasta.
  8. While cooking, remove lid and stir occasionally, replacing the lid afterwards.
  9. Enjoy!

 

 

Homemade Organic Four Cheese Supreme Pizza Strata

This is a way to kick a traditional strata up a notch and it’s wonderful to prepare when you don’t have the time to make traditional pizza dough and there’s leftover bread on hand.

Here’s What  You’ll Need:

Here’s How I do it:

  1. Tear the bread into bite sized pieces; Put half of them into a 9×13″ casserole.
  2. In a small saucepan, saute onion, green pepper, and mushrooms for 4-5 minutes with a sprinkle of salt; Add garlic and saute for an additional 2 minutes.
  3. Spoon vegetables over the bread.
  4. Layer the shredded chicken and beef on top of the vegetables.
  5. Sprinkle sliced olives on top of the casserole.
  6. Pour a layer of pizza sauce on top of the mixture.
  7. Top with mozzarella cheese.
  8. Mix the Parmigiano Reggiano, Pecorino Romano and Asiago cheeses in a small bowl; Sprinkle 1/2 of the mixture on top of the casserole.
  9. Arrange the remaining bread cubes on top of the cheese; Top with the other 1/2 of grated cheeses.
  10. In a medium mixing bowl, mix together eggs, stock, Real Salt and pepper; Pour on top of layered strata.
  11. Cover; Chill for 3-24  hours.
  12. Bake, uncovered, for 40-50 minutes or until a knife inserted in the center comes out clean.
  13. Let stand for 10 minutes.
  14. Makes 8 servings.
