Homemade Organic Zesty Baked Beans in a Slow Cooker

Here’s What You’ll Need:

  • 4 cups organic dried navy beans
  • 1-2 lbs. organic sliced pork belly, or organic uncured bacon
  • 1 large organic yellow onion, diced
  • 6-8 organic cloves of garlic, whole
  • 4 cups [1 quart] Homemade Organic Chicken Stock
  • 1 1/2 cups Homemade Organic Almost Heinz 57 Sauce
  • 1 1/2 Tbsp. organic prepared yellow mustard, like Eden Organic
  • 1/2 cup organic light brown sugar
  • 2 Tbsp. organic tomato paste
  • 1 Tbsp. Real Salt
  • 1 Tbsp. organic smoked paprika
  • 1 tsp. organic chipotle
  • 1 tsp. organic cumin
  • 1/2 tsp. organic red pepper flakes
  • 1/2 tsp. organic freshly ground peppercorn blend

Here’s How I do it:

  1. Rinse the beans thoroughly.
  2. Place the navy beans, diced onion, whole garlic cloves, chicken stock, Almost Heinz 57 Sauce, prepared mustard, tomato paste and light brown sugar into a 4- 5 quart slow cooker and mix well.
  3. On the low setting, cook the beans for 4 hours.
  4. Add the salt, smoked paprika, chipotle, cumin, red pepper flakes, and ground peppercorn blend to the stock pot and stir well.
  5. Cook the beans for an additional 6 hours on low, or until the beans are tender
  6. Enjoy!

Homemade Organic Almost Heinz 57 Sauce

Wow, I am so glad that I was able to make this sauce.  The recipe that I adapted can be found here.  I added more turmeric to the recipe to get the traditional color.  Otherwise it would look much more like ketchup mixed with raisin puree.  I think it turned out pretty well.  The taste matures in the refrigerator, so allow it to marinate overnight.

Here’s What You’ll Need:

  • 1/3 cup organic raisin puree
  • 1 cup organic distilled white vinegar
  • 1 cup organic raw apple cider vinegar
  • 1 cup organic cane sugar
  • 1 cup [8 ounces/ 7 ounces plus 2 Tbsp.] organic tomato paste
  • 1/2 cup unchlorinated and unfluoridated water
  • 2 Tbsp. Homemade Organic Basic Yellow Mustard; OR Homemade Organic French’s-Styled Classic Yellow Mustard 
  • 2 Tbsp. homemade organic applesauce
  • 1 1/2 tsp. Real Salt
  • 2 Tbsp. organic lime juice
  • 1/2 tsp. pureed organic onion
  • 1 organic clove garlic, pureed
  • 4 tsp. organic turmeric
  • 1/8 tsp. Homemade Chili Powder
  • 1 pinch organic cayenne pepper
  • 1 pinch organic celery seed

Here’s How I do it:

  1. Pour the 1/3 cup of raisins into a pint-and-a-half jar with 1/3 cup of water.
  2. Allow to sit for 30 minutes.
  3. Add the garlic and onion to the raisins, and puree for a minute on low with an immersion blender.
  4. Put the puree and the remaining ingredients into a 2 quart chef’s saucepan.
  5. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to medium-low and simmer for 30 – 45 minutes.
  7. Enjoy!

Homemade Organic Whole Grain Chicken Helper Honey Mustard Chicken

Here’s What You’ll Need:

  • 2 cups shredded Homemade Organic Chicken Roast or 1 pint Homemade Organic Freezer Ground Chicken Mix
  • 1 cup shredded organic carrots
  • 1 cup organic sweet peas
  • 1 garlic clove, minced (optional)
  • 1-1/2 cups organic brown rice
  • 2 Tbsp. organic schmaltz (rendered chicken fat)
  • 1-1/2 cups Homemade Organic Chicken Stock
  • 2/3 cup Homemade Organic Vegetable Stock
  • 1/2 cup organic white wine (Frey Vineyards recommended)
  • 1/4 cup organic whey (not powdered)
  • 1 Tbsp. organic white distilled vinegar
  • 1 Tbsp. organic lemon juice
  • 2 tsp. Homemade Organic Magic Poultry Seasoning
  • 2 tsp. Real Salt
  • 1/4 tsp. organic dry mustard
  • 1/4 tsp. organic yellow mustard seeds
  • 1/4 tsp. organic brown mustard seeds
  • 1/4 tsp. organic turmeric
  • 1/3 cup organic prepared yellow mustard
  • 2-3 Tbsp. local honey

Here’s How I did it:

  1. If using Homemade Organic Freezer Ground Chicken Mix:  Pour 1/4 cup water into a deep saucepan with lid; Add the frozen chicken mix, schmaltz and rice; Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces.  Add garlic (if using) and simmer for an additional 5 minutes.  Add the schmaltz and proceed with step 6.
  2. Heat a large frying pan (I used the ones with 2″ sides) over medium-high heat.
  3. Once the frying pan is heated, add the schmaltz; Heat the schmaltz until it is hot and bubbly.
  4. Add the carrots and rice to the pan.
  5. Saute for 10 minutes, until the rice begins to turn a light golden brown.
  6. In a small bowl mix the honey, prepared mustard, lemon juice and garlic.  Stir until it’s well blended.
  7. Add the honey mustard mixture, poultry seasoning, dry mustard, mustard seeds, and turmeric to the frying pan and stir well.
  8. Add the chicken stock, peas and shredded chicken (If not using the chicken mix) to the pan and stir until well blended;  Cover.
  9. Bring the mixture to a boil, then reduce the heat.
  10. Simmer for 50 minutes.
  11. While the mixture is simmering, prepare the glaze.
  12. After the rice mixture has simmered for 50 minutes, take off the cover.
  13. Carefully pour the glaze onto the rice mixture, and cover.
  14. Cook an additional 10-15 minutes, until the rice is tender and the liquid is mostly absorbed.
  15. Uncover and allow to sit for 5 minutes before serving.
  16. Enjoy!

Homemade Organic Garlic BBQ Sauce

  1. Combine all of the ingredients in a nonreactive saucepan.
  2. Slowly bring to a boil over medium-high heat.
  3. Reduce the heat to medium-low and gently simmer until dark, thick, and richly flavored, 10 to 15 minutes.
  4. Transfer the sauce to a clean glass jar and store in the refrigerator. It will keep for several months. (Though it never lasts that long in my household!)

Homemade Organic Big Daddy’s Carolina BBQ Sauce

  1. Mix all ingredients (except soy sauce and butter)
  2. Simmer on low for 30 minutes (be careful not to simmer too long!)
  3. Stir in remaining ingredients and simmer for an additional 10 minutes.
