Homemade Organic Vegetarian Enchilada Sauce

Here’s What You’ll Need:

  • 2 cups Homemade Organic Vegetable Stock
  • 2 cups unchlorinated and unfluoridated water
  • 2 cups organic strained tomatoes or organic tomato puree
  • 4 minced organic garlic cloves
  • 2 cups chopped organic yellow onion
  • 2 Tbsp. organic extra-virgin olive oil
  • 2 Tbsp. organic powdered chipotle pepper or 3 – 4 organic chipotles in ancho sauce
  • 2 tsp. organic dried oregano
  • 4 tsp. organic ground cumin
  • 1 tsp. Real Salt
  • 2 Tbsp. organic sour cream

Here’s How I do it:

  1. Heat a deep frying pan over medium-high heat.
  2. Place the fat (schmaltz, tallow or lard) into the pan and heat until warm and bubbly.
  3. Add the onions and saute for 5 minutes.
  4. Add the garlic and saute until the onions and garlic are light brown around the edges.
  5. Place the onions, garlic and stock into a 1/2 gallon Mason jar.
  6. Puree the mixture using an immersion blender.
  7. Pour the mixture back into the frying pan.
  8. Add oregano, chipotle, garlic, onion, salt and tomato puree.
  9. Mix until well blended.
  10. Simmer uncovered for 40 minutes or until desired consistency is reached, stirring occasionally.
  11. Stir the sour cream into the sauce before serving; omit if canning this recipe.
  12. Enjoy!

Homemade Organic Hamburger Helper Spaghetti

Here’s What You’ll Need:

Here’s How I do it:

  1. If using Homemade Organic Freezer Meat Mix:  Pour 1/2 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen beef mix, bell pepper (if using) and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces and add the tomatoes, mushrooms (if using), and garlic.  Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  2. Brown the beef in a saucepan until halfway done.
  3. Add the bell pepper (if using) and onions, then saute with the ground beef for 5 minutes; Add the tomatoes, mushrooms (if using), and garlic, then saute until the beef is brown and the onions are clear.
  4. Pour in the beef/pork/chicken stock, vegetable stock, whey and tomato paste.
  5. Stir in the basil, Itaian seasoning, Real Salt, cane sugar paprika, and turmeric until well blended.
  6. Carefully add the broken spaghetti noodles; Make sure they are covered with liquid.
  7. Slowly bring the mixture to a boil then simmer, covered, until the noodles are al-dente, approximately 18-22 minutes, stirring occasionally.
  8. Garnish with grated organic Parmigiano Reggiano cheese and/or sprigs of organic fresh parsley, if desired.
  9. Enjoy!

Homemade Organic Slow Cooker Spaghetti

Here’s What You’ll Need:

Here’s How I do it:

  1. Add the beef and sausage mixes to a deep frying pan with lid; Pour in 1/2 cup water and bring to a boil.
  2. Once boiling, reduce the heat and simmer for 15 minutes; Break up any large chunks, cover, and simmer for an additional 5 minutes.
  3. Add the meat mixes to a 5-6 quart slow cooker, along with remaining ingredients (except raw spaghetti).
  4. Heat in slow cooker on LOW for 6 to 8 hours, or on HIGH for 3-5 hours.
  5. Approximately 30-40 minutes before the end of cooking time, cook the raw spaghetti in boiling water (with a pinch of salt) until halfway cooked, approximately 8-13 minutes.
  6. Serve the sauce over the spaghetti.
  7. Enjoy!

Homemade Organic Slow Cooker Chunky Taco Dip

Here’s What You’ll Need:

  • 1 lb. grass-fed organic ground beef
  • 1/4 cup Homemade Organic Beef Stock
  • 1/4 cup reserved kidney bean liquid
  • 1 cup organic crushed tomatoes
  • 2 cups organic frozen corn
  • 2 cups cooked organic kidney beans, drained
  • 2 cups cooked organic black beans, drained
  • 1 cup freshly diced organic tomato  [1 medium]
  • 1 cup diced organic red onion
  • 4 organic garlic cloves, minced
  • 2-3 Tbsp. minced Homemade Organic Pickled Jalapenos; OR Homemade Organic Pickled Serranos
  • 2 Tbsp. Homemade Organic Taco Seasoning, divided
  • 2 tsp. Real Salt
  • 4 Tbsp. organic masa harina (corn flour); OR unbleached organic white flour mixed with 4 Tbsp. unchlorinated and unfluoridated water (slurry)
  • 1/4 cup finely chopped fresh organic cilantro; OR 1 Tbsp. organic dried cilantro (optional)
  • hot sauce (optional)
  • organic tortilla chips, for serving

Here’s How I do it:

Slow Cooker:

  1. Add all ingredients except the slurry and tortilla chips and cook on low for 5-6 hours; Add the slurry 30 minutes before the cook time ends, and stir until well combined.
  2. Serve from the slow cooker with tortilla chips on the side for dipping.
  3. This recipe yields approximately 11 cups of dip.
  4. Enjoy!

Warmers:

  1. Cook the ground beef and 1 Tbsp. taco seasoning in a large skillet until browned, breaking up any large chunks.
  2. Add the beef stock, bean drippings, crushed tomatoes, corn, kidney beans, black beans, garlic, hot peppers, 1 Tbsp. taco seasoning, and salt; Stir to combine well.
  3. Increase the heat to boiling, then reduce and allow to simmer for 20  minutes; Add the slurry to the skillet and allow to simmer until thickened.
  4. Transfer the dip to your warmer.
  5. Serve from the warmer with tortilla chips on the side for dipping.
  6. This recipe yields approximately 11 cups of dip.
  7. Enjoy!

This would also be delicious as a burrito, taco, taco salad, taco bowl, etc.

Homemade Organic Chicken Helper BOLD Cajun Chicken

This recipe has been adapted to use ground chicken instead of raw cubed chicken.

Here’s What You’ll Need:

  • 1-1/2 cups organic brown rice
  • 1 Tbsp. home rendered schmaltz; OR organic pasture butter
  • 1 lb. pastured ground chicken; OR 1 pint Homemade Organic Freezer Ground Chicken Mix
  • 1-1/2 cups PLUS 1/2 cup (divided) Homemade Organic Chicken Stock
  • 1-1/2 cups PLUS 1/2 cup (divided) Homemade Organic Vegetable Stock
  • 1/2 cup diced organic yellow onion
  • 1/2 cup diced organic red bell peppers
  • 1/2 cup diced organic green bell peppers
  • 1/2 cup sliced organic celery (optional)
  • 2-3 organic garlic cloves, minced
  • 2 tsp. Homemade Organic Cajun Dry Rub
  • 2 tsp. Real Salt
  • 1 tsp. organic chili pepper powder
  • 1 tsp. organic paprika
  • 1/4 – 1/2 tsp. organic cayenne pepper (to taste)
  • 1 Tbsp. organic Nama Shoyu
  • Garnish: sliced organic green onions (optional)

Here’s How I do it:

  1. Prepare the Rice:  Place the rice, 1 Tbsp. home rendered schmaltz/organic pasture butter, 1 tsp. Real Salt,1-1/2 cups of vegetable stock and 1-1/2 cups of beef stock into a 1 quart saucepan with lid; Cover, bring to a boil then immediately reduce the heat and simmer on low for 45 minutes.
  2. If using Homemade Organic Freezer Ground Chicken Mix:  Pour 1/2 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen chicken mix, onion, bell pepper and celery (if using). Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces.  Add the garlic; Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  3. Saute the ground chicken in a saucepan until halfway done.
  4. Add the onion, bell pepper, celery (if using) and garlic; Saute with the ground chicken for 6 to 7 minutes until the chicken is light tan and the onions are clear.
  5. Add the chicken stock and vegetable stock; Stir well.
  6. Add the Cajun seasoning, paprika, chili pepper powder and salt; Stir well.
  7. Slowly bring the mixture to a boil then simmer, covered, until the brown rice is fully cooked, approximately 40-45  minutes.
  8. Mix the fully cooked brown rice into the skillet.
  9. Pour the Nama Shoyu into the skillet and stir to combine.
  10. Garnish with fresh sliced organic green onions, if desired.
  11. Enjoy!

 

Homemade Organic Hamburger Helper Cheesy Ranch Burger

Here’s What You’ll Need:

  1. If using Homemade Organic Freezer Beef Mix:  Pour 1/4 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen beef mix, tomatoes, and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces and add the garlic.  Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  2. Brown the beef in a saucepan until halfway done.
  3. Add the tomatoes and onions then saute with the ground beef for 5 minutes; Add the garlic and saute until the beef is brown and the onions are clear.
  4. Pour in the beef stock, vegetable stock, whey, heavy cream and milk.
  5. Add the fusilli pasta and stir well.
  6. Stir in the salt, turmeric, parsley flakes, ranch seasoning mix and vinegar/brine until well blended.
  7. Slowly bring the mixture to a boil then simmer, covered, until the noodles are al-dente, approximately 18-22 minutes.
  8. Stir in the mayonnaise/sour cream, cheddar, ricotta, Parmigiano Reggiano and blue cheeses while allowing them to melt into the dish.
  9. Garnish with sprigs of organic fresh parsley, Homemade Organic Pickled Cucumbers or Homemade Organic Pickled Jalapenos, if desired.

Homemade Organic Chicken Helper Ultimate Cheddar Broccoli

Here’s What You’ll Need:

Here’s How I do it:

  1. If using Homemade Organic Freezer Ground Chicken Mix:  Pour 1/2 cup water into a deep saucepan with lid; Add the frozen chicken mix, and onion. Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces.  Add the garlic; Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  2. Pour 1/2 cup water into a deep saucepan with lid; Add the frozen chicken mix and onion.
  3. Simmer for 15 minutes over medium heat, covered.
  4. Uncover; break up the frozen chunks into smaller pieces.
  5. Add the garlic to the pan; Cover and simmer for an additional 5 minutes.
  6. In a pint jar combine the milk and flour; Put a tight fitting lid on the jar and shake until well blended.
  7. Pour the broccoli, pasta, stock, milk mixture, salt and pepper into the pan; Stir slowly to mix well.
  8. Bring the mixture to a boil.
  9. Reduce the heat, and simmer, covered, for about 18 minutes.
  10. Add the cheddar, blue and ricotta cheeses to the skillet and mix well.
  11. Mix 2 Tbsp. flour with liquid from the skillet and add to the dish to thicken.  Use the remaining 2 Tbsp. of flour in the same fashion to reach desired thickness.
