Homemade Organic Creamy Italian Parmesan Dressing

This recipe was adapted from Mr. Food.

Here’s What You’ll Need:

  • 3/4 cup Homemade Organic Thick Mayonnaise
  • 1 Tbsp. organic sunflower oil
  • 1/4 cup organic white vinegar
  • 1 Tbsp. organic 100% lemon juice
  • 1/4 cup finely shredded organic Parmigiano Reggiano cheese
  • 1 tsp. organic cane sugar
  • 2-3 organic garlic cloves, minced (optional)
  • 1/2 tsp. organic Italian seasoning
  • 1/2 tsp. Real Salt

Here’s How I do it:

  1. Place all ingredients into a large-mouth pint Mason jar.
  2. Use an immersion blender to combine all ingredients until smooth.
  3. Refrigerate until ready to serve.
  4. Enjoy!

Homemade Organic Copycat Kraft Fresh Take Classic Four Cheese

I don’t know why Kraft named a cheese blend “Classic Four Cheese” when there are five cheeses in it, but that’s the way it is.

Here’s What You’ll Need:

For the Seasoned Breadcrumbs:

For the Cheese Blend:

  • 2-1/2 Tbsp. finely shredded organic Colby cheese
  • 2-1/2 Tbsp. drained and finely shredded organic cheddar cheese
  • 2-1/2 Tbsp. finely shredded organic Monterey Jack cheese
  • 2-1/2 Tbsp. drained and finely shredded organic mozzarella cheese
  • 2 Tbsp. organic unbleached white flour

Here’s How I do it:

  1. Combine in a spice grinder the Parmigiano Reggiano, salt, sugar, garlic, onion, paprika and turmeric; Grind into a fine powder.
  2. In a small mixing bowl, stir the seasoning blend, breadcrumbs, olive oil and whey together until well blended; Set aside.
  3. In a medium mixing bowl, combine all cheeses and flour until blended; Set aside.
  4. This mix is now ready to use in recipes.
  5. Enjoy!

Homemade Organic Copycat Kraft Fresh Take Rosemary and Garlic

Here’s What You’ll Need:

For the Seasoned Breadcrumbs:

For the Cheese Blend:

  • 3 Tbsp. plus 1 tsp. strained and finely shredded organic mozzarella
  • 3 Tbsp. plus 1 tsp. grated organic Parmigiano Reggiano
  • 3 Tbsp. plus 1 tsp. finely shredded organic provolone
  • 3 Tbsp. plus 1 tsp. grated organic Pecorino Romano
  • 2 Tbsp. organic unbleached white flour

Here’s How I do it:

  1. Combine in a spice grinder the salt, crushed rosemary, granulated roasted garlic, granulated garlic, brown sugar, and sugar; Grind into a fine powder and combine with the paprika and turmeric until well blended.
  2. Combine breadcrumbs, olive oil, whey, and seasoning powder in a small stainless steel bowl; Set aside.
  3. Combine all cheeses in another small stainless steel bowl along with the flour until the cheeses are coated well with the flour; Set aside.
  4. This recipe yields 1-1/2 cups.
  5. Enjoy!

  1. Combine in a spice grinder the salt, 2 Tbsp. Parmigiano Reggiano, Italian seasoning, parsley, granulated garlic, granulated onion, and celery seed; Grind into a fine powder and combine with the paprika and turmeric until well blended.
  2. Combine breadcrumbs and seasoning powder in a small stainless steel bowl; Set aside.
  3. Combine all cheeses in another small stainless steel bowl along with the flour; Set aside.
  4. This is now ready to be used in Homemade Organic Fresh Take Chicken Parmesan, or Homemade Organic Fresh Take Baked Spaghetti.
  5. This recipe yields 1-1/2 cups.

Homemade Organic Hearty Vegetable Frittata

Here’s What You’ll Need:

  • 3 Tbsp. organic extra-virgin olive oil
  • 2 medium organic Idaho potatoes, rinsed and diced small
  • 3/4 cup diced organic yellow onion
  • 3/4 cup diced organic bell pepper
  • 6 organic pasture eggs
  • 1 tsp. Homemade Organic Garlic Paste
  • 1 tsp. Real Salt
  • 1/2 tsp. organic dried oregano
  • 1/8 to 1/4 tsp. organic cayenne pepper
  • 1/4 cup shredded organic Colby cheese
  • 1/4 cup grated organic Parmigiano Reggiano cheese

Here’s How I do it:

  1. Preheat the oven to 375° Fahrenheit.
  2. In an ovenproof skillet (such as an all-stainless-steel skillet), heat the oil over medium heat until warm and bubbly.
  3. Add the potatoes to the skillet and stir to coat thoroughly with the oil, then cook until the potatoes are lightly browned, approximately 15 to 20 minutes; Remove the potatoes from the pan and set aside.
  4. To the same skillet, add the onion and bell pepper; Saute until tender, approximately 5-6 minutes; Add the potatoes and saute until heated through, approximately 5 minutes.
  5. Beat the eggs with the salt, pepper, oregano, and cayenne; Pour the egg mixture on top of the cooked vegetable mixture.
  6. Place the skillet into the oven and bake for 20 minutes, or until the cheeses are a light golden brown.

Homemade Organic Tuna Helper Tuna Creamy Parmesan

Here’s What You’ll Need:

Here’s How I do it:

  1. If using Homemade Organic Freezer Ground Meat Mix:  Pour 1/4 cup water and butter into a deep saucepan with lid; Add the frozen meat mix, carrots and onions (if using).  Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces.  Add the garlic (if using); Cover and simmer for an additional 5 minutes.  Proceed with step 3.
  2. To a large frying pan with lid, add the butter, onions, carrots and garlic, then saute until the onions are clear; Add the cooked, flaked fish (if using).
  3. Add the flour to the skillet; Stir until well combined.
  4. Pour in the fish stock, water, buttermilk and peas (if using).
  5. Stir in the salt, pepper and parsley flakes; Stir until well blended.
  6. Add the fusilli pasta to the skillet and mix well.
  7. Cover and bring the mixture to a boil, then reduce to a simmer; Cook for 16-22 minutes or until the pasta is al dente.
  8. Stir in the Parmigiano Reggiano cheese until melted and well combined.
  9. Enjoy!

Homemade Organic Chicken Nuggets Parmesian

I have adapted this recipe from Rachael Ray.

Here’s What You’ll Need:

Here’s How I do it:

  1. Preheat the oven to 350° Fahrenheit.
  2. Bring 2 quarts of water to a boil; Add 1 tsp. of salt and the noodles and cook until al dente, approximately 8 to 13 minutes.
  3. Place the pouch containing the nuggets on a baking sheet and put into the oven; Heat for 15-20 minutes, or until warmed through.
  4. Prepare the Homemade Organic Pomodoro Sauce, if not all ready done; If it is made, warm it up.

To Serve:

  1. Place the noodles on a plate with some of the Pomodoro sauce on top.
  2. To the side of the noodles, place some nuggets with Pomodoro sauce on top.
  3. Sprinkle the pasta and nuggets with the mozzarella or provolone and Parmigiano Reggiano cheeses.
  4. Garnish with fresh organic parsley, if desired.
  5. Serve with your favorite vegetable side dish or salad.
  6. Enjoy!

 

Homemade Organic Cheese Paste

I use this to make Homemade Organic Chef Boyardee Tomato Sauce which I use in Homemade Organic Chef Boyardee Beefaroni and Homemade Organic Chef Boyardee Spaghetti with Meat Sauce.

Here’s What You’ll Need:

  • 3 Tbsp. organic unbleached white flour
  • 1/2 tsp. Real Salt
  • 1 cup unchlorinated and unfluoridated water
  • 1/2 cup shredded organic cheddar cheese
  • 1/2 cup grated organic Parmigiano Reggiano cheese

Here’s How I do it:

  1. Mix the flour, salt and water in a medium saucepan with a wire whisk.
  2. Cook the mixture over medium heat until thickened, stirring often.
  3. Add the cheeses and stir them (they’ll stick to a whisk at this point) until well blended.
  4. Cook the mixture while stirring constantly for a couple of minutes until thick like a paste.
  5. This is now ready to use in recipes.
  6. Enjoy!

Homemade Organic Hamburger Helper Lasagna

Here’s What You’ll Need:

Here’s How I do it:

  1. If using Homemade Organic Freezer Meat Mix:  Pour 1/2 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen mix, and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces and add the tomatoes and garlic.  Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  2. Brown the beef in a saucepan until halfway done, or warm up the Italian sausage with some water, if using.
  3. Add the tomatoes and onions, then saute with the ground beef for 5 minutes; Add the mushrooms and saute until the beef is brown and the onions are clear.
  4. Pour in the beef  or pork stock, vegetable stock, whey and milk.
  5. Add the broken lasagna noodles or farfalle pasta; Stir well.
  6. Stir in the salt, sugar, basil, paprika, oregano, turmeric and red pepper flakes (if using) until well blended.
  7. Slowly bring the mixture to a boil then simmer, covered, until the noodles are al-dente, approximately 18-22 minutes. Stir in the ricotta, cheddar (if using), and Parmigiano Reggiano cheeses and allow them to melt into the dish.
  8. Garnish with sprigs of organic fresh parsley, if desired.
  9. Enjoy!

Homemade Organic Baked Chicken Nuggets with Herbs and Parmigiano

The seasoning blend is from Rachael Ray and it’s delicious; I adapted her recipe to make it organic and baked instead of pan-fried.

Here’s What You’ll Need:

For the breading:

  • 2 cups Homemade Organic Herbed Breadcrumbs
  • 1 cup freshly-grated organic Parmegiano Reggiano cheese
  • 1 Tbsp. organic dried thyme; OR 6 sprigs or stems fresh organic thyme leaves, stripped and chopped, 2 to 3 tablespoons
  • 1 Tbsp. organic dried rosemary; OR 6 sprigs fresh organic rosemary leaves, finely chopped, 3 tablespoons
  • 2 Tbsp. organic dried parsley flakes; OR 2 handfuls chopped organic flat-leaf parsley leaves
  • 1 tsp. organic granulated garlic; OR 4 organic garlic cloves, finely chopped
  • 1 teaspoon organic crushed red pepper flakes

For the nuggets:

  • 3 cups unchlorinated and unfluoridated water
  • 2 Tbsp. Real Salt
  • 6 organic pastured chicken breasts, skinned and boned
  • breading mix (see above)
  • 1 cup [1 stick] organic pasture butter
  • 1/2 cup organic schmaltz (or additional organic pasture butter)
  • Real Salt, to season chicken
  • freshly ground organic peppercorn blend, to season chicken
  • 1 cup organic unbleached white flour

Here’s How I do it:

  1. Preheat the oven to 450° Fahrenheit.
  2. Cut the chicken breasts into 1″ squares and place into a medium stainless-steel bowl with the water and 2 Tbsp. Real Salt; Allow to soak in the brine for 30 minutes to an hour, then pat dry before setting aside.
  3. Warm the butter in a small saucepan over medium heat; keep it on low to stay liquefied.
  4. Season chicken tenders with pepper; Wash hands thoroughly in warm-hot water.
  5. Place flour in a shallow dish.
  6. Keep the melted butter in the saucepan and use it as your second dish.
  7. In a third dish, combine the breading ingredients.
  8. Coat chicken in flour, then in the melted butter, then in the breading mixture.
  9. Place the nuggets onto a cookie sheet;  Wash hands thoroughly in warm-hot water.
  10. Bake the nuggets for 5-6 minutes; Flip the nuggets and bake for 5-6 more minutes, or until golden brown on each side.
  11. Wrap 20-25 nuggets in unbleached parchment paper, then once again in aluminum foil.  Write the date you made them on the foil in permanent marker and freeze for up to 3 months.
