Homemade Organic Amazing Buffalo Chicken Dip

Here’s What You’ll Need:

Here’s How I do it:

  1. If using Homemade Organic Freezer Ground Chicken Mix:  Pour 1/2 cup chicken stock into a deep frying pan with lid; Add the frozen chicken mix, celery and onions.  Simmer for 15 minutes over medium heat, covered. Break up the frozen chunks into smaller pieces, add the garlic; Cover and simmer for an additional 5 minutes.  Proceed with step 5.
  2. In a deep frying pan, heat the butter until warm and bubbly; Saute the onions, celery and garlic until softened, approximately 5 minutes.
  3. Add the hot sauce, dill, parsley, paprika, then stir until well combined.
  4. Stir in the shredded chicken (if using), cream cheese and blue cheese; Cook until cheeses are melted and the dip thickens.
  5. Place into a warming slow cooker, or dip server; Serve warm.
  6. Enjoy!

Homemade Organic Freezer Chopped Hot Dog Mix

Here’s What You’ll Need:

  • 3 organic pasture eggs
  • 2 cups Homemade Organic Soft Bread crumbs
  • 2 cups chopped organic celery
  • 2 cups chopped organic yellow onion
  • 1 tsp. Real Salt
  • 3 lbs. organic hot dogs (with no synthetic additives), finely chopped

Here’s How I do it:

  1. In a large mixing bowl, beat eggs slightly.
  2. Stir in bread crumbs, celery, onion, and salt; Add meat and mix until well blended.
  3. Cook half of the mixture in a large skillet or the bottom of a wide stockpot until the meat is lightly browned; Repeat with remaining half of mixture.
  4. Allow the mixture to cool; Measure into 2-cup portions (wide-mouth pint jars with tight-fitting lids) and freeze.
  5. Yields 7 pints of mix.

Homemade Organic Freezer Flaked White Fish Mix

Here’s What You’ll Need:

  • 3 organic pasture eggs
  • 2 cups Homemade Organic Soft Bread Crumbs (from white bread)
  • 1-1/3 cups sliced organic celery
  • 1-1/3 cups sliced organic onion
  • 1-1/3 cups sliced organic carrot
  • 1 tsp. Real Salt
  • 3 lbs. wild-caught turbot, cod, or other white fish, cooked, boned and flaked

Homemade Organic Dairyland Confetti Chicken Casserole

Here’s What You’ll Need:

Here’s How I do it:

  1. Preheat oven to 350° Fahrenheit.
  2. If using Homemade Organic Freezer Ground Chicken Mix: Pour 1/2 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen chicken mix, carrots, celery and onion. Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces.  Cover and simmer for an additional 5 minutes.  While the chicken mix is thawing, proceed with step 4.
  3. In a saucepan, combine carrots, onion, celery and chicken stock; Simmer for 20 minutes.
  4. Meanwhile, in a 3-quart casserole dish, mix shredded chicken/thawed chicken mix, soup, sour cream, mushrooms, Worcestershire sauce, salt and pepper; Add simmered vegetables along with the liquid into the casserole dish; Mix well.
  5. Prepare the Homemade Organic Confetti Topping.
  6. Drop the topping by the tablespoonful onto the chicken mixture.
  7. Bake in an oven preheated to 350° Fahrenheit for 40 to 45 minutes.
  8. Sprinkle with cheese and return to oven until melted, approximately 2-3 minutes.

Homemade Organic Freezer Italian Ground Sausage Mix

Use one pint of this mix instead of 1 lb. loose Italian sausage in recipes.

Here’s What You’ll Need:

  • 3 lbs. organic pastured ground pork
  • 3 organic pasture eggs
  • 1 Tbsp. organic red wine vinegar
  • 1 tsp. Real Salt
  • 1 tsp. organic freshly-ground peppercorn blend
  • 12 sprigs organic Italian flat-leaf parsley, finely minced OR 1 Tbsp. plus 1-1/2 tsp. organic dried parsley flakes
  • 1 small organic garlic bulb, peeled and minced [ approx 9-12 organic garlic cloves]
  • 3 Tbsp. minced organic fresh basil leaves OR 1 Tbsp. organic dried basil
  • 1 Tbsp. organic ground paprika
  • 2 Tbsp. organic red pepper flakes
  • 1 Tbsp. organic fennel seeds
  • 3/4 tsp. organic brown sugar
  • 3/4 tsp. organic dried oregano
  • 3/4 tsp. organic dried thyme
  • 2 cups Homemade Organic Soft Bread Crumbs
  • 1 cup chopped organic celery
  • 1 cup chopped organic yellow onion
  • 1 cup chopped organic carrot
  • 1 cup chopped organic green bell pepper

Here’s How I do it:

  1. In a large mixing bowl, beat eggs slightly.
  2. In a large stainless steel mixing bowl, combine the ground pork, red wine vinegar, eggs, ground peppercorn blend, parsley, minced garlic, paprika, brown sugar, red pepper flakes, fennel seeds, brown sugar, oregano, and thyme; DO NOT smash the meat as it will make it a weird texture, instead pull the meat apart gently and mix carefully with your fingers.
  3. Cover and refrigerate the sausage mixture for 24 hours.
  4. Gently mix in celery, onion, carrot, bell pepper and breadcrumbs into the sausage mixture.
  5. Cook half of the mixture in a large skillet or the bottom of a wide stockpot until the meat is lightly browned; Repeat with remaining half of mixture.
  6. Allow the mixture to cool; Measure into 2-cup portions (wide-mouth pint jars with tight-fitting lids) and freeze.
  7. Yields 7 pints of mix.
  8. Enjoy!

Homemade Organic Hamburger Helper Classic Cheesy Jambalaya

Here’s What You’ll Need:

Here’s How I do it:

  1.  If using Homemade Organic Freezer Ground Beef Mix, Homemade Organic Freezer Ground Pork Mix, or Homemade Organic Freezer Ground Chicken Mix:  Pour 1/4 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen meat mix, bell pepper, celery (if using), tomatoes and onions.  Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces and add the garlic and jalapenos.  Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  2. Brown the meat in a saucepan until halfway done.
  3. Add the bell peppers, tomatoes and onions to the skillet then saute with the ground meat for 5 minutes; Add the garlic and jalapenos then saute until the meat is fully cooked and the onions are clear.
  4. Pour in the chicken stock, shrimp stock, whey and milk.
  5. Add the brown rice and stir well.
  6. Stir in the salt, Homemade Organic Cajun Dry Rub, paprika and turmeric until well blended.
  7. Slowly bring the mixture to a boil then simmer, covered, until the pasta or rice is fully cooked, approximately 40-45 minutes for rice and 16-22 minutes for pasta.
  8. While cooking, remove lid and stir occasionally, replacing the lid afterwards.
  9. Enjoy!

 

 

Homemade Organic Chicken Helper BOLD Cajun Chicken

This recipe has been adapted to use ground chicken instead of raw cubed chicken.

Here’s What You’ll Need:

  • 1-1/2 cups organic brown rice
  • 1 Tbsp. home rendered schmaltz; OR organic pasture butter
  • 1 lb. pastured ground chicken; OR 1 pint Homemade Organic Freezer Ground Chicken Mix
  • 1-1/2 cups PLUS 1/2 cup (divided) Homemade Organic Chicken Stock
  • 1-1/2 cups PLUS 1/2 cup (divided) Homemade Organic Vegetable Stock
  • 1/2 cup diced organic yellow onion
  • 1/2 cup diced organic red bell peppers
  • 1/2 cup diced organic green bell peppers
  • 1/2 cup sliced organic celery (optional)
  • 2-3 organic garlic cloves, minced
  • 2 tsp. Homemade Organic Cajun Dry Rub
  • 2 tsp. Real Salt
  • 1 tsp. organic chili pepper powder
  • 1 tsp. organic paprika
  • 1/4 – 1/2 tsp. organic cayenne pepper (to taste)
  • 1 Tbsp. organic Nama Shoyu
  • Garnish: sliced organic green onions (optional)

Here’s How I do it:

  1. Prepare the Rice:  Place the rice, 1 Tbsp. home rendered schmaltz/organic pasture butter, 1 tsp. Real Salt,1-1/2 cups of vegetable stock and 1-1/2 cups of beef stock into a 1 quart saucepan with lid; Cover, bring to a boil then immediately reduce the heat and simmer on low for 45 minutes.
  2. If using Homemade Organic Freezer Ground Chicken Mix:  Pour 1/2 cup unchlorinated and unfluoridated water into a deep saucepan with lid; Add the frozen chicken mix, onion, bell pepper and celery (if using). Simmer for 15 minutes over medium heat, covered.  Uncover; break up the frozen chunks into smaller pieces.  Add the garlic; Cover and simmer for an additional 5 minutes.  Proceed with step 4.
  3. Saute the ground chicken in a saucepan until halfway done.
  4. Add the onion, bell pepper, celery (if using) and garlic; Saute with the ground chicken for 6 to 7 minutes until the chicken is light tan and the onions are clear.
  5. Add the chicken stock and vegetable stock; Stir well.
  6. Add the Cajun seasoning, paprika, chili pepper powder and salt; Stir well.
  7. Slowly bring the mixture to a boil then simmer, covered, until the brown rice is fully cooked, approximately 40-45  minutes.
  8. Mix the fully cooked brown rice into the skillet.
  9. Pour the Nama Shoyu into the skillet and stir to combine.
  10. Garnish with fresh sliced organic green onions, if desired.
  11. Enjoy!

 

Homemade Organic Chicken Helper Creamy Chicken and Noodles

  2. Brown the chicken in a saucepan until halfway done.
  3. Add the onions, mushrooms, celery (if using), carrots and garlic, then saute with the ground chicken for 6 to 7 minutes until the chicken is light tan and the onions are clear.
  4. Add the chicken stock, vegetable stock, and milk; Stir well.
  5. Stir the egg noodles and peas into the skillet.
  6. Add the parsley flakes, turmeric and salt; Stir well.
  7. Slowly bring the mixture to a boil then simmer, covered, until the noodles fully cooked, approximately 16-22 minutes; Stirring occasionally.
  8. Top with 1 cup grated Parmigiano Reggiano cheese, 1/4 cup sliced green onions, and/or 1/4 cup Homemade Organic Herbed Breadcrumbs.
  9. Enjoy!

Homemade Organic Sweet Baby Ray’s Meatballs

Here’s What You’ll Need:

Here’s How I do it:

  1. In a large pan over medium high heat, warm the tallow or lard until hot and bubbly.
  2. Add the carrots to the pan and saute for 5 minutes.
  3. Add the celery, onion and bell pepper to the pan and saute for an additional 5 minutes, or until the vegetables are tender.
  4. Add the meatballs to the pan.
  5. Pour the BBQ sauce and stock into the pan, season with salt and bring to a boil.
  6. Reduce the heat and simmer until the sauce thickens.
  7. Add the pineapple and heat through.
  8. Serve over hot, cooked rice.
  9. Enjoy!

Homemade Organic Golden Garden Soup

Here’s What You’ll Need:

  • 6 medium organic carrots [1 lb.], chunked
  • 3 medium organic potatoes, chunked
  • 3 ribs organic celery with leaves, chunked/cut up
  • 2 medium organic yellow onions, chunked
  • 4 cups Homemade Organic Chicken Stock
  • 2 tsp. Homemade Organic Magic Poultry Seasoning
  • 1 tsp. Real Salt
  • 1/4 tsp. organic freshly ground peppercorn blend
  • 1 Tbsp. fresh organic dill, finely minced; OR 1 tsp. organic dried dill
  • 1 cup grass-fed organic whole milk
  • 1/4 cup organic pasture butter

Here’s How I do it:

Stovetop:

  1. Transfer the chopped vegetables to a large stockpot; Add the chicken stock, poultry seasoning, dill and salt; Cover and simmer until tender, about 45 to 60 minutes.
  2. In small batches, add cooked mixture and blend until smooth; Repeat with remaining mixture.
  3. Return pureed mixture to stockpot add milk and butter; Heat until warmed through.
  4. Enjoy!

Slow Cooker:

  1. Coarsely chop the vegetables in small batches using a food processor or blender.
  2. Transfer the chopped vegetables to a __ qt. slow cooker; Add the chicken stock, poultry seasoning, dill and salt; Cover and simmer on low for 6-8 hours.
  3. In small batches, add cooked mixture and blend until smooth; Repeat with remaining mixture.
  4. Return pureed mixture to kettle, add milk and butter and heat on high for 30 minutes, or warmed through.
  5. Enjoy!
